There wasn't a lot of steaming going on in the 1960's/70's South. There was plenty of frying, but I never saw a steamed vegetable. Thanks for the peanut recipe. So far I have made your scallion oil, scallion pancake, chili oil #1, and have started using Chinese black vinegar, dark soy sauce, Sichuan peppercorns, and dried pepper flakes. In my 40+ years in front of the stove no other single source of inspiration/information has had more influence on my routine cooking in such a short amount of time than you have - not even Martha (!)
Gosh. To all the people who wonder about whether to toast or fry peanuts: It's a totally different texture and mouth-feel. And to all the people who are suggesting to toast peanuts in an oven: it's best to toast in a cast iron skillet so that the caramelization is uneven. You want it to look dark in some spots, white in others--like bruised skin.
I would advise that you use peanut oil, instead of vegetable oil, just to enhance the flavor. Also, if you take these pan roasted peanuts, mash them up, and add a little sugar, you have homemade peanut butter.

I prefer my peanuts boiled. They taste amazing especially if the peanuts are just soft enough and you can keep eating and eating. Boil them with the shell still on, you won't regret it. It takes around an hour to boil though.

I think you mean a strainer or a colander. Ahhhhhh You should try the salted peanuts with congee. SO GOOD, it works as a great dish and seasoner with the congee, because no need to add extra salt x) also you can crush them and put it into salad, thats what my mum does in her Vietnamese salad

Jeff Jeffery You can buy shelled raw peanuts in a Chinese grocery store . It comes in a sealed clear plastic pack of about a pound or less. No more than $2/pack. Two kinds. - one with skin ( reddish in color) or no skin ( white and usually marked “blanched”). The peanuts shown in the video is with skin. Great with a lot of fried garlic, too.
I honestly love cooked peanuts more than regular ones, when you eat them raw they are just too gritty texture wise for me. Then they get in your teeth and you're all O.O I need floss now. You don't feel that way when they've been cooked. ^__^

I microwave them... dry... no oil or water. Just need to take them out and toss them occasionally. Let it cool down. Gives identical results.

Actually, this worked quite well with roasted nuts. The only difficulty was shelling enough of the darn things first...
