It seems to be missing hard at idle.. Do you have a 1/8 hole drilled in the thermostat helps with bleeding air out of the system... My 318 roller cam runs with a 195 t stat in summer barely makes it to half way on gauge in traffic 98° weather I run a 7 blade HD fan with thermo clutch and the thick stock truck radiator.
Plugs have a lot of idle time on them, I need to change them. It has a 180 t Stat and 3 row radiator with electric fan. I'm leaning towards a leaky head gasket.

Get the blue test liquid and test for CO2 in the coolant if there is no signs of water in the oil... Good luck man.
