Sure, it probably was Black Box just being able to get their hands on a Cerbera but not on an actual M3 or whatever, but makes me sleep better at nights finding some coherency lol

What makes the Most Wanted BMW great was that in the time of exotic for-show supercars and crazy street jdm ricers, this was a legit sports race car, that looks like a race car, sounds like a race car, and runs like a race car
It's a pure race car, straight from BMW's own workshop, what made it a bit confusing in the game is that your character owns one privately in the story(impossible irl), he would've had to find it somewhere stolen from the BMW factory. And the character repaints an already custom racing livery, which also made it confusing back then as to what exact car that is. Until I started playing Gran Turismo 4. Then, it was clear😅

You can see by the wheels, body kit, but especially by that big tube inside and the cut side exhaust pipes, as well as a full roll-cage. The 6 road-legal ones you mention surely had the brilliant engine similar to true GTR, but being road legal with all the comfort options making that possible, they looked quite different than the ultimate 24-hour endurance machine our protagonist apparently has in the game :) BESIDES, completing nfsmw black edition unlocks the street legal version GTR in quick race mode, and there you can see the difference. But anyway, those few "streetversion" GTRs are unique and badass all the way, I agree

the reason you hear that is because generally racecars have sequential gearboxes,you shift them without clutching in(except the neutral to first gear).they have whats called as dog teeth gears,they have kind of like relatively big cogs(?) ,whenever you shift these gears these bog teeth or cogs besaically hit each other at very high relative speed and quickly catch so you get very fast engagement of the next gear and that sound.
