This is interesting because we moved from Texas to the mountains of NC 4 years ago. Had to sell my offset when moving and now looking to get another. I was set on thinking the G2 would be the ticket because we get some cold winds up here and the insulated firebox makes sense. Now I’m not sure 🤔

Great review! I can say before I sold my brazos I went with a stack extension for a better draw 16” I went to a old 1/4 steel Texas smokemaster I refurbished it has a square fire box I like better… I still love my ocp over under awesome chicken cooker plus 8 other cookers kinda like your pit… I love your content keep up the great informative cooks and reviews…
Great comparison! The whole reason to buy an offset is because fuel is flavor when smoking. Burning less fuel will result in less smoke flavor, so that's not a real benefit. An insulated cooker might help with stable temps, but I'm not surprised that an insulated fire box alone didn't make a huge difference.
David, I CRAVE an offset, but I only have a family of four and don’t need an offset to do 4-6 briskets at once. Do you know of a “small” offset? I realize airflow is increased with volume (whole point of offset,) but again, I don’t want to buy a huge offset for small cooks. Only thing I’ve seen so far is a Broil King unit at Loewe’s where I’m still spending almost $1k. Thank you!
I've had mine for almost a year and I keep mine covered with the fabric cover old county sells. I also cost my fire box with canola spray oil every couple of months. Don't let the fear of rust stop you from getting one of these if you're considering doing so. They are worth every penny!
Kinda surprised by the results just because I thought it would be harder to get consistent temps in that weather with the non-insulated firebox. There is one thing that drove me crazy about this video though. You repeatedly mispronounced Brazos. As someone from Texas, who grew up and lives no more than 10 miles from the Brazos River, the namesake of the smoker, I have to tell you that the local vernacular is brazz-us. Brazz like brass, but with "z" and us. Everybody not from here gets that wrong, and it drives me nuts. Just had to get that off of my chest. But I have the Brazos version without the counterweight, and to me, pound for pound, dollar for dollar, it's the best value smoker on the market. I absolutely love mine. I've added firebrick to the firebox to help insulate it, removed the stock baffle plate and use a cheap stove pipe as a stack extension to help out with the draft. It makes great Texas BBQ.

For the next snowstorm, could you insulate the cooking chamber on each to see if it helps?

I prefer an uninsulated box. My current smoker is semi-insulated and I still feel like it’s almost “too efficient” for the fire I like to run

So if you leave them outside do they rust or do you have to put some kind of coating on them to prevent that?
