I grew up on NE 9th street. Louis' was an institution. The recipe included italian sausage with the ground beef, which is where it got the unique flavor. I don't know the percentage, or the herbs - I don't know if anyone knows, including Tommy. He took orders from the running boards of my mom's car in the fifties.... I'd say I last ate there in....`73? `74? Its closure is one of the reasons I won't go home again.... Sad.
I'd eaten there once, I'd say in 2007, always wondered why the name copied the famous Louis Lunch in New Haven, CT. They opened in 1895. The building is now a vegan restaurant called "Daily Green".
