Watching the video I see the dorsal aspect of the hoof isn't dressed back to a uniform wall thickness. Would it be prudent to dress the toe back before you map out your hoof?
Mapping tells you where to trim and shoe, not the other way around. Plus, as he said, you can't take that much toe off in one shot.
