MUKIMO | How to make Mukimo with Pumpkin Leaves (Kahurura) | Irio | Kienyeji Mukimo

    Happy New Year.
    Welcome back to my channel. If you are new here kindly consider SUBSCRIBING!!
    In today`s video we are making my favorite type of Mukimo :).
    Mukimo is a delicious potato mash with a bunch of ingredients which can be customized to your liking. In this recipe I will be using these
    INGREDIENTS;
    1 Kg of Peeled Potatoes
    2 big bunches of Pumpkin Leaves
    2 Soft Maize combs
    1 Red Onion
    Salt to taste
    3-4 Tbs of Cooking oil
    Serves 5 Decent Portions
    * TIPS*
    Greens: You can always substitute the pumpkin leaves with spinach or green peas.
    This may change the taste slightly.
    Potatoes: Do not over boil the potatoes. They may become too soft/watery for mashing giving you a runny mukimo. You need the potatoes perfectly cooked and soft.
    Remember to drain the water into a bowl you might need the soup when mashing @3:18 to achieve the perfect consistency.
    Onions: Cook the onions until completely brown (almost like they are burning) to give your Mukimo a nice taste to it.
    I served the Mukimo with pan fried chicken which I had marinated in honey, garlic and thyme with a sweet honey and garlic sauce. It goes well with beef stew, chicken ,pork or goat meat stew too.

    Mukimo is Mt Kenya food. Yaani WaKamba, WaEmbu, WaKikuyu, na WaMeru. You should always remember to tell that to everyone. There's a reason the Maasai shuka is not called Kenyan shuka, but Maasiai shuka.

    Which is that machine you are using to smash potatoes and for how long should you smash the potatoes

      It's called a masher.. you should mash the potatoes until all of them are completely crushes and well blended in.

      Hi.
      If you don`t have a blender, cut the pumpkin leaves into smaller sizes (almost like you cut sukumawiki) then steam to remove the raw taste of the leaves and add them into the mash. The leaves will blend in well when mashing the mukimo.

    When boiling the pumpkin leaves... Do add something like baking powder or just water

      No, I don`t add anything it`s just water to steam the veggies and get rid of the raw vegetable taste.
