  • What should I serve along with my homemade chocolate waffles? I wondered .... Hmmm .... Oh yes, Matcha Ice Cream! As always, I use high quality matcha powder from Japan, because the green colour will be very beautiful. This recipe is found from the Healthy Foodie Ph TH-cam channel, with slight modification to the steps, and I hope you will love this matcha ice cream as much as I do.

    Whipping cream (hot, for matcha) 鲜奶油 (热, 抹茶用) 100g
    Matcha powder 抹茶粉 20g (2 Tbsp)
    Condensed milk 炼乳 180g
    Whipping cream (chilled) 鲜奶油 400g

    Have you ever try whipping coconut cream until meringue? If its possible, that would be so cool.

      I guess you are referring to coconut whipped cream…never tried that myself but it is possible to make coconut whipped cream

      No need to boil, just hot enough (~60 -70C) to dissolve the matcha powder

      I’ve seen recipe that uses milk instead of whipping cream, but I’ve never tried it before.

      @@karlinpatisserie i'm pretty sure using milk alone without any emulsiifer won't give you the proper cream texture, let alone the iced version. Milk contain too much water and the water will freeze into big ice crystals overnight.

      @@LJune-cq9jd Good to know that. I've never tested ice cream recipe which uses milk alone though. But iced milk is nevertheless a nice frozen dessert

      Never used evaporated creamer before for this recipe, but there is still a difference between evaporated creamer and condensed milk, in terms of sugar content and water content. Not a simple 1-to-1 substitute.

      Yes…but the mouthfeel will be different from dairy whipping cream

    Hey! I followed the recipe exactly but the ice cream has a bitter aftertaste to it. I think it’s the matcha I used but is there something I can add to the ice cream now that it’s done to remove that aftertase?

      Congratulations for attempting the matcha ice cream! :)
      Since it is already been made, nothing can really be done to the ice cream itself. But, you can try to serve it with toppings or syrup to alleviate the aftertaste, such as Japanese style sweet red bean, or drizzle some black sugar syrup "Kuromitsu". They go really well with matcha.
      Perhaps you my want to reduce the amount of matcha in the recipe, to your liking, for your next batch of ice cream.

      I use a hand held mixer to whip up the cream, start from low speed and gradually increase to high speed

      I use culinary grade Uji matcha powder from Sazen Tea, Deluxe Chiyo no Sakae Matcha

      Yes condensed milk is sweetened. I don’t find any unsweetened one

      If other ingredients remain the same, the bitterness from matcha might become too pronounced. Unless you like your matcha flavour to be extremely strong. 20g matcha is just right for me
