2nd Screen about accessing Mule apps on private internal ports - My view is that no public request from Internet should be allowed to enter directly ( even if SSL enabled ) into VPC.
There are requirements to expose the api publicly which deployed within vpc private port. So we create dedicated load balancer to access those apis publicly. Dedicated load balance provides options for whitelisted cidr which is useful when you want to allow traffic from fewer clients.

Given that We have a non prod VPC setup and DEV env with a few applications sits on it , Now when an application in this VPC connects with an external system such as SAP , what will be the Mule source IP for this application ? (We also have a VPN set up for this VPC) ..Thanks in advance!

Can we change the DNS NAME after deployment ?
Dns name is depend on application name. Application name cannot be renamed. You to delete and redeploy application with different name.

It should be one of the IPs in that CIDR range.
