Cooking used to scare the hell out of me (especially on the smoker). Bradley, I discovered this channel about 6 months ago and it has changed my life. I’ve found a new passion in life and you have helped tremendously. Thank you for putting out these videos. I truly appreciate it.
Loved the Liar Liar reference 😂 keep killing it man!
A goose!
I’m loving these off cut videos keep up the great work
If anyone hasn’t tried making fresh ham if any sort, I highly recommend you do. It’s super easy, and I find it infinitely better than the presmoked ones you’ll find at the grocery store. And don’t stres if you can find the actual ham cut. A picnic shoulder works great, too!
Yup....Got four kgs in cure right now :)
Homemade Tasso for the win.
Picnic shoulder is awesome because of the skin. You can direct heat (or even a combo of smoke/direct heat...my favorite because best of both worlds) that puppy and the skin comes out deeeeeelicious.
And it's usually cheap as hek. Almost always under $2/lb, at least here in Texas. Sometimes you can find it for like 99c/lb.
Do NOT sleep on the picnic shoulder. Its friggin GOOD.
Edit: So I guess what I am saying is skip the ham altogether and make pulled pork with crispy skin. 🤣
Although, perhaps it works when ya ham it up as well. 🤣
Totally want to try making this then shredding it up on a pretzel bun with Swiss cheese and that honey mustard bbq sauce!
Hahaha love the Liar Liar blooper reference..."a goose!"
I'm kicking my ass, do ya mind
As a man born and raised in South Carolina I can greatly appreciate the mustard based sauce.
Classic buck 110 today, can't go wrong, just like any of your recipes! Another good one 👍
I carry the Buck 110 auto everyday. Excellent taste in knives🤘🏿🤘🏿
i really enjoy your videos...your a trip to watch...you make cooking look fun...and when i watch your videos, i usually try to make the same stuff...very inspiring...and the little taste tester at the end..love it...keep doing what your doing...thank you
Made barbacoa this past weekend. Turned out great! I’ve been having tacos everyday this week. This recipe is definitely on the list next !
love the jim carry liar liar reference
One of my favorite movies that i have watched several million times. I popped when he hit that reference
Making 15 of these tasty hams for the family Christmas dinner. Can’t wait to try them! Thanks for the video!
How did they come out?
@@1230mkelly amazing. I had to pull them a little early due to limited time so they didn’t shred, but were tender and tasty.
Hah! At 7:45 the pork shank squirted at the camera when you squeezed it!
Hershey squirt
I just found you in the past few weeks and I'm working through all your videos. I'm obsessed with making sausage right now and I'm waiting for a stuffer to get delivered. I have a suggestion for Thanksgiving/holidays that I've been thinking about. A turkey/stuffing/cranberry sausage. I'm debating on tackling it because watching you has given me too much confidence for my lack of experience so far but it sounds really cool to me. If you could figure it out I would be so excited to see it and try it. I love how you cook in normal sizes for only a single family instead of for an army like some others do. Thanks so much and you are so much fun to watch! Thanks for your content and ideas!!
Leroy & Lewis have something similar going on for the upcoming Holiday. Check them out.
Delicious looking!! Gonna try this one ASAP!
Saw you on Guga's channel. Probably his best recommendation ever! Bingeing your videos now. Most excellent!
It’s be cool to see a traditional schweinshaxe on the grill!
Food looks awesome!! Buuuuut we need a outtakes video!! I know you have hit your head on that cutting board 🤣 keep up the great work!
I'm definitely trying this with some venison shanks!!!!!
I've had it made with bear, it was awesome.
Fantastic video, a must try. Also wanted to thank you for the Chud Chimney. Shipped fast, highest quality chimney I've ever seen and will pass down for generations. lol On to the tallow and stock.
I would love to see you make lau lau its a delicious hawaiian dish and one of my favorites
I'll have to look that one up. Thanks.
@@davidbuben3262 definitely worth giving a try!
@@s1nph0n3y9 I surely will. I need to go back to the Hawaiians. Every time I went, I never wanted to leave. For weeks, I lived on guava, pineapple, and Hawaiian beef. Last time I was there was 1984. Maui. I spent most of my time camping, hiking, scuba diving, spear fishing, catching octopus, and even hunting wild pigs with some native Hawaiian friends I met while there. So friendly, and never called me a Howlie. 🙂 They invited me and my wife to their luaus, which is just a family get together. Nothing like the touristy stuff. I don't think I'm your typical tourist. I can go native real quick. And I'm a white boy. With a real dark tan. 😂
Dude that was a great idea/recipe/video!!! Love it
Well done Brad, looks amazing!
Ham grenade is my favorite pork seasoning
Made these... amazing. For the sandwich. Ham, pimento cheese, mustard sauce, toast. was legit
Thanks I been looking for hanger steaks forever and now I know where to get them I placed my order
Most amazing looking Hershey Kiss!!
Never thought that I would ever want to cook shanks again, then you made this video. I guess I'm making shanks
Love this channel, just did potato skins over the weekend due to his videos, so good. Keep up the good work.
I make ham tacos with my left over smoked ham all the time and it’s glazed in a mustard brown sugar glaze. A little coleslaw and make a chipotle aioli with some mayo and chipotles in adobo. It’s fantastic
These look incredible! Something different
Bring forth, the Holy Ham Grenade!
😂 Because the Boot Snake has teeth! And it leaps!
You put on 1 hell of a show!
I want some of that in a Cubano!!!!
Funny I was just telling my wife I want to try to make a holiday ham from scratch one day, but these will be way easier! Man my list of unique bbq cooks is getting very long thanks to you! Great video as usual!
Ever tried doing those german-style? Haxe is usually not smoked...but why not? And skin on doing it like a belly with crispy skin? Could be amazing.
Pork shanks I think
Looks AMAZING!!!
A Goose! Absolutely sent me. Great movie
Also in the ATX, will also try this for Thanksgiving if I can get them locally. Gonna hit up Johnny G’s on Manchaca. Thanks!
Make a big batch of those and save some in the freezer for making beans or soup later (bones only or with meat).
Yes please...
Would love to see you make a brisket on a Kamado style smoker.
In the South, we call those ham hocks.... they are DELICIOUS!!
@ Allen Bateman. Ham hocks are normally from the rear leg from where the ham comes from. Hints the name “ham”
@@daviddixon7613 if you wanna get freaking technical about it a ham hock is the joint between the tibia and fibula and the metatarsals of a pig's foot, where the foot was attached to the hog's leg. last time i checked, a hog has 4 feet..
@@allenbateman3518 My bad. I promised I do not want any smoke. You are right and I am wrong. ✌🏾
Love theese of cut bbq vids! ❤🤤
Working on convincing the fam to do a brisket instead of turkey for thanks giving. maybe i'll throw this to sweeten the deal for them
love the Liar Liar "a goose" deep cut
Day 2 of asking Papa Chud to make Puerto Rican blood sausage
Morcillas are the bomb!!! Im married to a Puerto Rican women..been to PR..I've had it all...smoked Morcillas will be a challenge...I've always had them fried!! Good call..something different being smoked if thats what your intentions are for chud..with that being said I've been asking 2 simple questions and i cant get a response..love the channel no doubt..i guess we're not elite bbq people..idk
Killing it man, keep it up!!
Will be searching for pork hocks this week! Looks fantastic!
That would be great in a breakfast hash or omelette. Another great recipe, Brad!
Yes please...
Wow! That looks phenomenal
น้ำลายไหลเลย
Great Video again Bradley! I'll have to give these a try myself. Can you do something on a whole smoked Turkey before Thanksgiving? I usually Spatchcock them after an overnight Brine but I'd like to see your technique if possible. Thanks and keep the videos coming! LC from Spring, TX! How'd that Snake get in my boot?!?!
I just read the words "Blueberry Gouda Sausage" and I'm asking you to make this.
I second that!
Yup.
Great cook, hammy whammy!
You got any tips for cures like this? How much salt/pink salt/sugar/water/etc to use per pound of meat? How long to cure it based on the thickness of the meat and the salinity of the brine? I understand that there might be some calculus (and probably guessing or gut feeling) involved but I always have difficulty finding guidelines and measurements that use weight and sometimes that makes me frustrated. I've been wondering if there is any general formula that can be applied. Maybe like a baker's formula where everything is measured as a percentage of the weight of the flour. Would love any guidance or resources you've got. If you make a video about it that would be even better!
pork shank tacos!!! i can't wait to try this recipe.
i love the liar liar bloopers reference ;)
Char siu on the chudbox would be awesome!
Sour dough bread lightly buttered, Dill Pickles and English mustard done
Looks amazing like always.
"A Goose" Right from Liar Liar! NICE!!!
Woof woof. Great smoked pork. Bottoms up in everyway
Watch at 0.5 playback speed to get that drunk uncle vibe!!!
Oh God, I'm pissing myself laughing!
Unbelievable! They look so good!!
Wow a must try
Nice automatic Buck in the tool roll.
“Crushed garlic” proceeds to throw in 4-5 completely intact cloves of garlic haha
your doggo has the best job in the world
The flavor of the hind leg (ham) is richer than that of the front leg. It makes great pulled pork BBQ.
I've never laughed so much at a food video! You are very entertaining, my friend!! Thank you!
That presentation and that face at 7:43 lol
I’m lucky and have 2 local butchers I can visit each week. It’s amazing. I can even get pork cheek!
Love all the vids keep ‘‘em coming! Itd be cool to see a turkey sausage video!
An automatic Buck Knife, Nice.
Another delicious-looking recipe.
That pulled meat would awesome in a Reuben style sandwich!
“A goose!” Killed me 😆😆
Coming soon to all BBQ joints near you...
"A goose" I caught that reference sir and I was cracking up lol
The buck 110 auto is the real star in this video.
Christmas hams incoming. Try a different glaze on each ham.
If you were going to use the shanks for making soups/stews, would you still go with the rub and smoke it as long?
Geeze that sounds good. I make the Pioneer Woman's Chili bean recipe. It's not actually chili, more like cowboy beans. I add ham hocks to mine then take off the meat and add it back in. If I added these shanks instead, holy cow. Another level. Thanks for the idea.
Ever try smoke braising?? It actually works very well
Ham Grenades! YASSS! (now I need to find out if my local guy can hook me up, otherwise another order from Porter Road)
Bbq croque madame? I’m making one 🤤
What’s the little burner/hot pad you used to heat the brine?
how do you heat your pans on the cutting board? is that induction or electric?
Wow, another way to enjoy pit roasted meats. I'm feelin this for a Sunday dinner..
Never heard of pulled ham (get your mind out of the gutter...LOL) but that looked so good, might be on my list to try. Thanks!
I pulled a hamstring once. Does that count?🙂
@@davidbuben3262 that's going to be a bit of a challenging wank to be completely honest with you, but i'll try my best, should be able to knock this out with some can-do spirit
i mean, your surname reads a bit like "booben" too,i'm sure we can get something done here :D
What kind of heat plate are you cooking on. It looks like an induction burner but there is no base on it.
Hey, second of your vids I've watched. Just subscribed. This lil mini-ham perfection is right in my lane. Prague Salts scare me a bit, but I'll give it a go when I come off my next deployment. Porter Road's site will also get a visit. Very entertaining presentation by someone who both knows "some stuff" and has fun with so-called life.
Hot blanky blank table,cool
I dont know if you have or not, but id love to see some top sirloin cap action on the smoker!
I'm sooooo Hungry now... 😆
Wow! I just realized Porter Road is in Nashville Tn. I live just over an hour from them.
Doing these for Thanksgiving.
Winner 🏆
We call em pork knuckles ❤
Been waiting all week!
I have some Shanks from our butchered hogs giving me a thought
