    If anyone hasn’t tried making fresh ham if any sort, I highly recommend you do. It’s super easy, and I find it infinitely better than the presmoked ones you’ll find at the grocery store. And don’t stres if you can find the actual ham cut. A picnic shoulder works great, too!

      Picnic shoulder is awesome because of the skin. You can direct heat (or even a combo of smoke/direct heat...my favorite because best of both worlds) that puppy and the skin comes out deeeeeelicious.
      And it's usually cheap as hek. Almost always under $2/lb, at least here in Texas. Sometimes you can find it for like 99c/lb.
      Do NOT sleep on the picnic shoulder. Its friggin GOOD.
      Edit: So I guess what I am saying is skip the ham altogether and make pulled pork with crispy skin. 🤣
      Although, perhaps it works when ya ham it up as well. 🤣

    I just found you in the past few weeks and I'm working through all your videos. I'm obsessed with making sausage right now and I'm waiting for a stuffer to get delivered. I have a suggestion for Thanksgiving/holidays that I've been thinking about. A turkey/stuffing/cranberry sausage. I'm debating on tackling it because watching you has given me too much confidence for my lack of experience so far but it sounds really cool to me. If you could figure it out I would be so excited to see it and try it. I love how you cook in normal sizes for only a single family instead of for an army like some others do.       @@s1nph0n3y9 I surely will. I need to go back to the Hawaiians. Every time I went, I never wanted to leave. For weeks, I lived on guava, pineapple, and Hawaiian beef. Last time I was there was 1984. Maui. I spent most of my time camping, hiking, scuba diving, spear fishing, catching octopus, and even hunting wild pigs with some native Hawaiian friends I met while there. So friendly, and never called me a Howlie. 🙂 They invited me and my wife to their luaus, which is just a family get together. Nothing like the touristy stuff. I don't think I'm your typical tourist. I can go native real quick. And I'm a white boy. With a real dark tan. 😂

    I make ham tacos with my left over smoked ham all the time and it’s glazed in a mustard brown sugar glaze. A little coleslaw and make a chipotle aioli with some mayo and chipotles in adobo. It’s fantastic

      @ Allen Bateman. Ham hocks are normally from the rear leg from where the ham comes from. Hints the name “ham”

    You got any tips for cures like this? How much salt/pink salt/sugar/water/etc to use per pound of meat? How long to cure it based on the thickness of the meat and the salinity of the brine? I understand that there might be some calculus (and probably guessing or gut feeling) involved but I always have difficulty finding guidelines and measurements that use weight and sometimes that makes me frustrated. I've been wondering if there is any general formula that can be applied. Maybe like a baker's formula where everything is measured as a percentage of the weight of the flour. Would love any guidance or resources you've got. If you make a video about it that would be even better!

      Geeze that sounds good. I make the Pioneer Woman's Chili bean recipe. It's not actually chili, more like cowboy beans. I add ham hocks to mine then take off the meat and add it back in. If I added these shanks instead, holy cow. Another level. Thanks for the idea.
