Amazing video! Thank you! I have a 6 quart as well but can I add 3 cups of rice? Will it be too much for the Instant Pot? If I can add 3 cups of rice instead of 2, does everything else stay the same or would I need to alter the measurements for the other ingredients?

You can use an ice cube tray to put your sofrito in to freeze and put them in a freezer bag. Then you just grab a cube out as you need to 🙂
