Humid air in a tight boat means you're still breathing. The breathing part, as you would say, is a good thing.
Your boat really is a multi-tool: cruiser, dehumidifier, and even a gym ;) Good work!

You can never have enough handles and mount points. 😄👍
Have you considered wearing a helmet inside the cabin in rough weather to protect your noggin from abrasions or lacerations if you are thrown against the bulkhead or one of those many protruding handles? Maybe even an impact vest to protect your ribs.
Seat belt in breaking seas but no helmet.
The distance to the ceeling is only 90 cm or so
I agree 100% about the high humidity and the idea is using the windows to remove the humidity you can also freeze solid bottles and hang them with a saucer underneath with an overboard drain to remove excess humidity in tropical environment. Your humidity issue is from your own breathing though which hopefully you can control with hatches when the weather is nice

The basic idea is to make your boat a submarine. Can submarines sink ? I know that they can run aground under water the US Navy did accomplish that feat, If you build a boat like a submarine that never descends into the depths than is it safe this is basically what Sven is creating weather he realizes or or not. It is a life capsule

Interesting theory. As usual I have some questions: Could it be that the condensed water gets shaken out of those pockets? Making the moisture level pretty constant? Have you used the same method before?
I have used on many a boat before.
A capsize would empty the pockets temporarily
