- Dubai Kunafa Chocolate Bars with Homemade Pistachio Cream - Pure & Delicious!
Ingredients:
For the Pistachio Cream:
• 2 cups raw pistachio kernel (unsalted)
• 1-2 teaspoons sugar (adjust to taste)
• 1-2 tablespoons neutral oil (e.g., light olive oil) or 1-2 tablespoons milk (for creamier consistency)
For the Kunafa Chocolate Bars:
• 1 package shredded phyllo dough (about 250g)
• 1/4 cup melted butter (for frying the phyllo dough)
• 300g milk or dark chocolate (for melting)
• 6 tablespoons (or about 1/3 cup) homemade pistachio cream
• 1-2 tablespoons chopped pistachios (for garnish)
Instructions:
Homemade Pistachio Cream:
1. Prepare the Pistachios: Begin by peeling the pistachios. Soak them in hot water for 10 minutes to loosen the skins, then drain and peel each pistachio.
2. Blend the Pistachios: Add the peeled pistachios to a blender or food processor. Blend until the pistachios break down into a coarse mixture.
3. Sweeten and Smooth: Add 1-2 teaspoons of sugar and gradually blend in 1-2 tablespoons of neutral oil or milk until the mixture is smooth and creamy.
4. Store: Transfer the pistachio cream into a jar. Store any leftover cream in the refrigerator for up to a week.
Kunafa Chocolate Bars:
1. Prepare the Phyllo Dough: Cut the phyllo dough into small pieces. Melt the butter in a frying pan over medium heat.
2. Fry the Dough: Add the cut phyllo dough to the pan and fry until golden and crispy, stirring frequently. Once done, remove from heat and allow the dough to cool completely.
3. Mix Dough with Pistachio Cream: In a mixing bowl, combine the cooled fried phyllo dough with the homemade pistachio cream. Mix well until the dough is evenly coated with the cream.
4. Prepare the Chocolate Base: Melt the chocolate in a double boiler or microwave, stirring until smooth. Pour a layer of melted chocolate into the bottom of your chocolate bar molds. Place the molds in the freezer for about 10 minutes, or until the chocolate is set.
5. Assemble the Bars: Once the chocolate base is set, add the phyllo dough and pistachio cream mixture on top of the chocolate layer, pressing it down lightly to ensure an even layer.
6. Top with Chocolate: Pour another layer of melted chocolate over the phyllo-pistachio mixture to cover it completely. Smooth the top with a spatula if needed.
7. Garnish: Before the top layer of chocolate sets, sprinkle chopped pistachios on top for decoration.
8. Set and Serve: Place the molds back in the freezer or fridge for another 10-15 minutes, or until the top chocolate layer is fully set. Once set, carefully remove the bars from the molds and enjoy your Dubai Kunafa Chocolate Bars!
Note: For a longer shelf life, you can use raw pistachios directly without peeling them. If you prefer to use peeled pistachios, consider roasting them in the oven at 350°F (175°C) for about 5 minutes to dry them out before blending into cream. This can help the pistachio cream last longer when stored.
• Drying Pistachios: Drying pistachios by roasting them lightly before making the cream can help reduce moisture, which can extend the shelf life of the pistachio cream.
• Oil vs. Milk: Using oil in the pistachio cream, rather than milk, is a good option for longer storage. Oil-based creams tend to last longer because oil acts as a preservative, whereas milk can introduce moisture that may lead to quicker spoilage.
• Storage: Store the pistachio cream in an airtight container in the refrigerator. If properly prepared and stored, oil-based pistachio cream should last for several weeks, while milk-based cream will typically last for a shorter period, around 1 week.

Tipp:
At first a tip of Leafgold (in german Blattgold), than a tip of white chocolate, now milkchocolate, pistache-mixture, mint-leaves and at last a bottom of dark chocolate. You also can add chiliflakes and seasalt to give it a more spicy taste.

The cream needs sugar and some sort of creamy ingredient as well (milk product or white chocolate). She literally just mixed pistachios with it, it’s gonna taste gross as hell. People usually use pistachio cream which is very sweet and similar to Nutella.

You need to temp the chocolate, so it has that snap when you break it. If you don’t, it becomes bendy.
But the pistachio center is supposed to be sweet. U didn't mix any condensed milk/honey.
