Hi, what’s usually the time for the cake to completely cool down ? Is it better to bake it and leave it overnight to cool down? Coz, even after sometime, sometimes I am not able to cut layers properly. Do you suggest keeping it in the fridge overnight for better results ?
I suggest first keeping it in a cool place, where the air is circulating on a cooling rack. then after about 1 hour if it's cool to touch, transfer to the fridge covered in plastic for about an hour. although the time is relative to the size. never put the hot cake in the fridge because it will become mushy. put the cake covered in plastic in the freezer for about 30 minutes before icing or frosting it to make sure it's firm enough. I let it sit at room temperature for 3-4 hours and then decorate it. If I have plans to decorate it the next day, I cover it with a big plastic container upside down on my cake or cover it with a plastic bag. Remove the cake from fridge and let it sit for 30 min to 1 hour after refrigeration before you start the decoration. For the decorated cake that has been partially cut/sliced, place the cake along with its plate/base. Place a big plastic container (without lid) upside down on the cake such that it covers the cake and the cross section of the cake doesn't dry out. However, you can slice the entire cake and transfer it to an airtight container.

Hi Mahesh, try yo bake at lower temperature next time. Try baking at 170°C in your oven. Keep your cake covered with a cotton cloth after its baked till it cools down

For any frosting, always put it in the fridge to firm up and then let it sit out of the fridge to reach room temp.
