Dumaguete is one of my fave places to go 🥰 i remember how i was amazed that there were tons of tourists but remains to be a bit laid back 😊👍 it's also a foodie paradise... silvanas being a case in point 🤭😍 by the way, if you liked silvanas, the taste of sansrival is similar and I think you'd like it too. Hope you get to try it next time! 😉

Bulalo is one of my favorite homemade dishes. I believe it is a specialty dish of Tagaytay, if I’m not mistaken. Glad you got the opportunity to try it. Not many foreigners or tourists talk about this particular dish. It’s probably better than sinigang, although it’s just my own opinion.

Nagutom ako bigla. I remember the days when i worked as a waiter at R&J Bulalohan Atbp. in Boni Ave., Mandaluyong City. Sabaw pa lng ng bulalo, ulam na.
In tagalog we called it "nilagang baka" with cabbage or green beans or chinese string beans. Bulalo is actually a tasty bones with meats on it serves in a big bowl of soup..
It's easier to eat bulalo with chopsticks, especially when "dipping" in fish sauce. Either the chopsticks give you more control than a fork and you can dip only a corner of each one-bite chunk you're holding, or you dip the chopsticks into the fish sauce and quickly brush the tip onto the meat chunk. The latter guarantees you can't have too much unless the chunk is just too small that even two drops will be too strong. And as for the rice...I'm with the Koreans on how to eat rice with soup. Philippine method is pour soup onto the rice; warm country so even that won't instantly congeal into beef fat on a plate. I still prefer just getting rice out of a bowl in a spoon then dipping it into the soup so every bite of rice has hot soup with it. Also...use some light soy sauce (guk ganjang) in the soup. As for the sylvanas...it's butter. Cheese is also dairy and fresh cheese like mozzarella will have a similar aroma, but aged cheese will be very different, even Edam. Cottage cheese is fresh but it comes in a brine and is a bit sour, so despite not being aged it doesn't really smell like milk.
