They dont really skimp on spices, and their taste is pretty close to authentic. the chili they use is not too spicy for indonesians but other than that everything is great. and also we have 600+ languages (as in, you can go to one place and dont understand what they are saying or writing at all) not dialects. from those 600+ languages, there are thousands of dialects spoken in different areas. Indonesian language itself also differs in dialects depending on areas.
