I thought the sa.e thing in the previous video. Nothing against oldtimer knives, my favorite everyday carry knife is a 8OT senior stockman and I carry a sharp finger when hunting. Her knife just wasn't the sharpest and the sharpener probably wasn't gonna change that. I would have had that rabbit processed very quickly with my sharp finger and Case large stockman because I keep them very sharp and have a field hone to keep them shaving sharp.
Wouldn't be more efficient and less painful to sever the head with one hit? In this method you also won't have any coagulated blood since it can run out immediately?

Great video! I am getting ready to start my own meat rabbit raising. I do have one tip that I’ve learned over the years skinning deer or hogs. I started using cotton cloves about 20 years ago and it makes it easy during the dressing and butchering. I buy a bulk back and sometimes I will wash them or just throw them away.

As a journeymen meat cutter at a higher end processing plant the only advice i can give is to get a meat hook so you don't have to cut by your hand! A diamond wand would also help with the knife. Very informative video all around. Very surprised on the meat content of that bunny.

These rabbits are no different from cattle both are domesticated and not wild and are meant for slaughter and consumption Rabbits from a pet store are also domesticated but they are no meat rabbits they are PETS.
I never had this problem, and personally my hasenpfeffer recipe is amazing. Wild rabbit will definitely be tougher than raised meat rabbits but even then I've had tougher cuts of beef so who knows maybe it's just the way she cooked them.
