  • Healthy Whole Wheat Bread
    Let’s make a healthy alternative to the regular white sandwich bread today - Whole Wheat Bread Loaf!
    Made using Indian MP Sharbati Wholewheat Flour, this loaf is surely going to be your favourite bake from now on! Nothing beats a Freshly made Homemade Bread!
    I have shared my tips and tricks learnt over the years for baking a perfect

    Ingredients
    _______________________________________________________________________
    Dough Ingredients
    Whole Wheat Flour - 400 gm
    (Use MP Sharbati flour Variety for best results in bread baking as it has slightly higher protein content than other Indian varieties. I have used Ashirwad Select Flour; you may use freshly milled one too)
    Milk Powder -30gm
    Salt - 1.5 teaspoons
    Brown Sugar - 2 tablespoons (1 in Dough and 1 in Yeast activation)
    Instant Yeast - 1 Tablespoon + 1/2 Teaspoon
    Oil (Extra Virgin Olive Oil preferred) - ¼ cup
    Water (Lukewarm) - 1 cup (for dough) + 1/3rd cup (for Yeast)
    Flaxseed Gel - 2 Tablespoon
    Boiled and Mashed/finely Grated Potato - 115 gm

    Flaxseed Gel
     Flaxseed Seed (Raw) - 25gm
     Water - 250 ml
    _______________________________________________________________________
    Procedure
    1. Prepare Flaxseed Gel
    a) Take water in a pan and add raw flaxseed seeds.
    b) Boil it till the liquid becomes and slimy and resembles egg whites.
    c) Immediately take it off from the heat and pass it through a sieve.
    d) The Liquid collected in the bowl is the Flaxseed Gel.
    e) It can be kept in an airtight container and stored in Freezer for approx. 2 months.
    2. Activate the Yeast
    a. Mix Yeast, 1 tablespoon Brown Sugar and 1/3rd cup lukewarm water in a bowl
    b. Cover it and let it rest for 5-10 min till it becomes foamy.
    3. Dough
    a. Mix WWF, Milk Powder, Salt and Sugar in a bowl.
    b. Add Flaxseed Gel and Yeast Mixture in the bowl.
    c. Add Mashed Potato.
    d. Add the Remaining Water.
    e. Knead the dough properly using an Electric Kneading Machine or using your hands, till the dough becomes smooth and elastic.
    f. Now add the oil in the dough and knead it till the oil is absorbed and incorporated in the dough completely.
    g. Oil the container and the dough and cover the container.
    h. Let the dough proof for 1-2 hours at room temperature till the dough doubles in volume.
    4. Preheat the oven to 220 degrees Celsius with both top and bottom heating elements on. Also preheat a cast iron Tawa or Pizza Stones along with it. Place a baking tray at the lowest rack in the oven for preheating too. This will be used to introduce steam in the oven while baking. Preheat the oven for at least 30 min - 45 min
    5. One the dough has doubled in size, take it out on a counter top and shape it into a log.
    6. Butter the Baking Pan and line at the bottom with a parchment paper.
    7. Place the log into the pan with seam of the log facing down.
    8. Add Hot boiling water into the baking tray kept in the oven which has been preheated with the oven as well. Put the Bread Pan on the pizza stones and bake it at 220 degrees Celsius for 15 min and the at 180 degrees Celsius for another 20 -25 minutes. Total baking time will be 35-40 min.
    9. Once baked, Take out the Bread from oven. Run a knife around the corners and flip out the bread from the pan. Cool the bread on a cooling rack for at least 2-3 hours and then slice.
    10. Keep it in a Moist Muslin cloth till it cools down.
    11. Enjoy your Yummy and Tasty Fresh Homemade Whole Wheat Bread!

      Thanks for your query ! I have not tried replacing flaxseed with eggs. This bread gives excellent results with Flaxeeds though. You may try with eggs and let me know 😊👍

    Hi ma’am.. I’m very comfortable with baking so plz tell me which bread I should be trying first for my 6 yr old who is a fussy eater.. I’m a millet fan has well and I do have kitchen aid stand mixer 😅

      Hi Divya . I am glad you liked the recipe. Currently I am using Kitchen Aid Machine. I find it helpful as it helps in kneading. However you can knead it by hand too. It will take a bit longer to knead though , but reaults will be good in that case too.

    Hi, the bread recipe is very nice....but can you give a substitute for the boiled potato...if you can.
    Can i use corn starch , arrow root, tapioca starch or potato starch instead of the boiled potato?
    Please do advice.

      You can use any Instant Yeast( pls check for expiration) However Currently I am using Angel Insatnt Yeast.

      You can use a cast iron Pan .... else use a baking tray turned upside down .

      Yes you may try by baking in a preheated large vessel with salt at bottom and covered on top. Try it on Gas stove and let me know how it turns out with oven 😊

    How can we bake in microwave convection?

      In Microwave, switch to convection mode and bake at 200deg celsius for 15 min and then at 180 deg celsius for another 15-20 min. You need to check after 30 minutes. You will have to leave the part of adding steam while baking in a microwave convection mode.

    1. What does the flake seed water do in the dough..?
    2. What if one don't use Potato..?

      Hi . Sorry for late reply. Potato helps in retaining moisture in the baked bread and prevents it from being dry and crumbly once baked. Flaxeed Gel acts as an egg replacer and helps in building the structure of the bread and gluten formation. I hope it helps . Happy Baking 😊

    Once again ...u didnt mention how much time we have to knead ...if doing by hands ..initially before proofing ...

      Kneading by hand will take around 12-15 minutes , and dough should be smooth and should spring back when poked lightly as shown in the video. Happy Baking !
