      Even a rough wire edge (rough wavy part on the edge of a raw grind) can saw through paper. Most of sharpening is profiling the bevels to meet then removing that wire edge with something finer. So sharpen until you form the wire then remove it. High-end steels are trickier as they form a microscopic wire but if it shaves on side and not the other, then that shows you a "wire" is curled in one direction and pops hair but slides over it like a boat hull in the other direction. (Or it could show bad edge geometry) Garbage steel often has a fat, ugly and claerly visible wire as the steel is much softer.

      What’s even more impressive is a knife that can cleanly cut a loose piece of paper towel, it’s even harder to do that than split a hair down the middle. I’ve only gotten knives that sharp a handful of times.

    • @flinchfu
      @flinchfu 2 ปีที่แล้ว +29

      @JumboOWoodie 3 Doesn't really work that way. A knife could be sharp enough to glide through cardboard but too dull to cut free-hanging paper clean as the fibers are finer than the edge and don't have the rigidity to hold it around the blade. I. e. a machete with a used edge can chop through sheet metal easier than cut through floating notebook paper. A fresh edge only stays ungodly-sharp as long as you don't use it... Doesn't matter what kinda top-end frakensteel a knife is made out of... it will get dull if used. A razor edge won't last if used but doesn't need to be razor sharp for most utility tasks... just sharp enough.

    Sharpness is one of those knife-culture obsessions that kind of annoys me. I think a lot of guys get knives, get the mirror edge, and never really use their knives, or they’ll do stupid things with them, like cut sandwiches. No matter how hair shaving a knife is and how fancy the steel is, after I use it for one day cutting boxes, that edge is gone and needs to be resharpened. I don’t really care too much about these “crazy sharp” paper cutting demos anymore, because it’s pretty irrelevant if you are actually planning on using your knife. And I’m not trying to dog on this particular video, it’s just a comment on the knife culture that bugs me. It’s akin to TV obsessed AVS-culture, people who watch screen test patterns and talk about color accuracy more than they actually watch real content.
    I think blade shape, weight, pocket clip, handle comfort, build quality, and ease of action are the most important factors

    People either need better headphones or have their ears checked cuz there's clearly a difference. One is sawing through while the other is cutting through. Then again I cut a bunch of paper myself when testing sharpness and can tell how sharp a knife is from the sound because I've heat it thousands of times.
