Simple everyday life: Daily vlog - Pickled radish, Potato Spam Stew, Eggplant fritters, Jewel Skynet

- Daily vlog starting from Friday evening where I decided to make some pickles with a leftover radish in my fridge. Added some carrots too. It was pretty easy to make. Just cubed the radish and then pour the sugar and vinegar sauce over them. Simple! Made Korean potato Spam stew or Gamja Jjjageuri (감자짜글이) for lunch on Saturday. It's another simple yet delicious dish with only a few ingredients and goes well with rice. Just potatoes and spam, or in my case MaLing luncheon meat. Just mashed up the meat and cooked it with the potatotes. On Sunday, I cut up the leftover eggplant or brinjal to make fritters. Fritter is such a good way of using and eating up all the leftover vegetables! I had also been drinking fresh coconut juice religiously after the covid vaccination as advised. On Monday, it started raining in the morning. I took leave to meet my friend. Thankfully the rain stopped and we met as planned at Changi Jewel airport. We wanted to visit the Canopy Park and tried walking the Skynet drapped across the open space above Jewel. Turned out it wasn't a walk in the park as we had imagined but a rather adrenaline inducing walk. Definitely not for the faint hearted or for any one with fear of heights. We saw some visitors needing help from the staff to help them crossed the net because they were simply too frightened! Had a good lunch with my friend after the harrowing walk and also a good dessert of ice-cream! It was a fun day hanging out with my friend.
