My recipe for banana bread (which I invented!) Is whipping the bananas with your butter and sugar, and whipping the eggs separately (you also need to use one fewer eggs than usual because the bananas work to bind the dough). Then all the egg and add the same weight of flour as the amount of butter you added. Add a good amount of bicarbonate/baking powder, some vanilla powder, and gentlyix together to get the lightest banana bread you will ever sample
My favourite for over riped banana is cengkodok pisang 🍌 this is asian or purely malaysian im not so sure.. mashed it, mix it with clarified butter, egg, dash of vanilla, sugar, pinch of salt, lil bit of baking soda, and flour. (Mind you this is not a traditional recipe but this is my sis's and i love it so much!) You can add shreded coconut too if you like. Let the mix set for a lil while and then scoop it and deep fry them balls until they're golden brown. Bam! It's done! Its soooo darnn gooddddd!!! 😋😋😋

I had really dark bananas and just microwaved for 30 seconds and they were nice and soft so it only took a minute to blend into ice cream. The consistency isn’t exactly right but it’s pretty good
Those banana pancakes are awesome, but mine where the stickiest things ever, stuck to the buttered non-stick pan immediately and I ended up having little pieces of pancake balls, which were fantastic, but annoying lol. I also added a pinch of chili flakes, and I got one single spicy bite out of all 4 of the pancakes haha
I prefer my bananas ripe with all of those brown spots. Really ripe brown bananas make the best banana bread!! I add dried blueberries to my banana bread. I soak the blueberries in water or room temperature chai.. the chai gives the blueberry (drained of course) banana bread a delicious but not overpowering spice. I always make a double batch because my family will devour it 😊

Frozen strawberries with some nut milk (I use unsweetened pecan’s milk) and stevia make a really nice vegan/keto strawberry ice cream!
