    2 cups chickpeas (chana), soaked overnight
    2 medium onions, finely chopped
    1 tablespoon ginger-garlic paste
    2-3 green chilies, chopped
    1 bay leaf
    2-3 cloves
    1 cinnamon stick
    2-3 black cardamom pods
    1 teaspoon cumin seeds
    1 teaspoon coriander powder
    1 teaspoon cumin powder
    1 teaspoon red chili powder (adjust to taste)
    ½ teaspoon turmeric powder
    1 teaspoon garam masala
    Salt to taste
    3 tablespoons oil
    Fresh coriander leaves for garnish
    Instructions:
    Cook the Chickpeas:
    Drain the soaked chickpeas and add them to a pressure cooker with 5-6 cups of water, salt, bay leaf, cinnamon stick, and cardamom pods. Cook for about 20-25 minutes until the chickpeas are tender. Alternatively, boil in a large pot until soft but not mushy.
    Drain and reserve the water for later.
    Prepare the Masala:
    Heat oil in a pan on medium heat. Add cumin seeds, cloves, and let them crackle.
    Add finely chopped onions and sauté until golden brown.
    Stir in the ginger-garlic paste and cook for 1-2 minutes until the raw smell goes away.
    Add coriander powder, cumin powder, red chili powder, turmeric powder, and salt. Cook for 3-4 minutes, stirring occasionally.
    Combine with Chickpeas:
    Add the cooked chickpeas to the masala and mix well. If the mixture looks too dry, add some of the reserved chickpea water.
    Let the chickpeas simmer in the masala for 10-15 minutes on low heat, allowing the flavors to meld.
    Add garam masala, stirring gently.
    Garnish and Serve:
    Garnish with freshly chopped coriander leaves and green chilies and boiled egg. and enjoy with naan, paratha, or rice.
    Optional Toppings: You can top Lahori Chana with finely chopped onions, tomatoes, and yogurt for an extra layer of flavor.
