This is the best German Pancake recipe I have ever tried, and I've tried sooooo many over the last ten years. I use an 8" cast iron pan since I'm alone for breakfast so I cut the amounts of ingredients by 3 to fit the pan. I've never had a German Pancake rise and not fall but this one stood tall, even after cooling. It is nice to have the hints about bringing the milk and eggs to room temperature and...no preheating of the pan! I'm sold, this recipe is a keeper and I can ignore all others.

Recipe: Dry: 1 & 3/4 Cup AP Flour 3 Tbsp Sugar 1 Tbsp lemon zest 1/2 tsp salt 1/2 tsp nutmeg Wet: 1 & 1/2 cup milk 6 Large eggs 1 & 1/2 tsp vanilla extract 1) Add 2/3 of wet to dry, whisk, then add the rest being careful not to overmix but whisking till smooth 2) Add 3 tbsp butter to a 12-inch non-stick oven-safe skillet and melt over medium-low heat 3) Once melted, add batter to skillet and place into cold oven 4) Turn on oven and bake at 375*F for 30-35 mins, or until nice and golden brown & risen massively Apple Compote: 1 & 1/4 lb apples; cored, peeled, and diced by cutting in half, then half again, then diced 1) In a skillet, melt 2 Tbsp butter over medium heat 2) Add 1/3 cup water & 1/4 cup brown sugar & 1/4 tsp ground cinnamon & 1/8 Tsp salt 3) Add apples, bring to simmer, then cover and cook for 5 mins Serve warm with apple compote!
This is essentially double Chef John's recipe from Food Wishes. Only his has no sugar or lemon zest in the batter. His recipe calls for 3 TBSP of clarified butter in a ripping hot 10" cast iron skillet into 425° pre-heated oven for 20-25 minutes.

Hi, I'm English and this recipe is very similar to Yorkshire Puddings. We used to have them with a roast and then the remainder we used to have afterwards with sugar, butter and lemon on them. Delicious.
Yorkshire pudding, Dutch Babies, and popovers have really similar batters. If you have a way to watch it, Alton Brown did an episode of Good Eats (sorry to post about a rival show, ATK...) about popovers, and showed that by slightly modifying the ingredients that go in the batter and the method of cooking/baking, you can make all three. Also, I really should try Yorkshire pudding someday. It looks/sounds amazing every time I see a recipe for it come up on TH-cam. :)
I've made this recipe often and it comes out perfect every time. It is one of their best. The rise is never the same height twice but that gives it more charm. The grandkids like to compare this rise with the last one. They also have a recipe-for-two version that uses a 10-inch skillet.

The recipe for popovers I inherited from my mother (and I'm 71 years old) calls for using a well-buttered non-stick muffin pan, and putting them into a cold oven and setting it to 450, and they pop beautifully. I like the crispy tops ;-)
I’d love the recipe.... I wish oh wish I had my grandma’s hand written recipes. But I’m one of 17 grandkids and grandma had 7 kids... she also usually had her in-laws living in the basement grandparents apartment and always had extra kids and family members around... I’ll have to ask my aunts... because I really don’t think Grandma used written recipes. She would make three or four different things for breakfast or lunch, for the bunch of kids at her house, me being one of them. Lucky me.
This recipe is awesome. I diminished it by 1/3, and it was still a showstopper. I tried Martha Stewart and many others, but this was the absolute best!

Thanks it turned out just the way you people did it , and i enjoyed it very much , the only thing is , I didnt get any syrup with my apples , it all cooked away . But it all tasted very good 😃
Yum. My mom used to make these when she was in a good mood which means every few years or so. I vaguely remember she served them with fresh lemon, real maple syrup and berries.
I love this recipe! It is so easy to make and it’s foolproof. I have made it many times. I also like eating it with jam. And like they said, it is a real showstopper. I really like the custody Bottom of this recipe, it is sort of like the texture of French toast. Delicious!

LOVE ATK .... and love this recipe!! I have to cook and eat gluten free and really love your two GF cookbooks. by the way .. this works great with GF flour .. I did add about a half tsp of Xantham gum to the dry ingredients.
I'm naking this now my oven takes 20 minutes just to preheat. I think next time, I'll preheat it and put it in halfway through preheat. Or, add that 35 minutes to the baking time. *** Edit for post results. It got high on one side with a nice golden brown crust, the other puffed up about an inch above the rim. The center puffed up. It baked through perfectly. The taste is and texture is perfect! Since it took longer in the oven, my apples abd sauce cooked down a lot. I ended up adding another 3 tbsp butter, about 4 tbsp brown sugar and a dash more cinnamon ans another 1/3 cup water to the cooked apples. It turned out great. I will definitely make this again. My husband asked for mixed berries next time. I may make this once a month. Thank you for the recipe. ❤
@steve1253 I did put it in a cold oven. It takes a lot longer than the bake time given. As I said, it takes 20 minutes, actually, it can take up to 30 minutes sometimes to reach temperature. Not everyone's ovens are the same, so I know I need to add that extra time on top of their time. I still wonder if I preheated it, maybe even 10 minutes before, if that will help. Either way, it still turned out.
Thanks for the recipe, looked delicious. I did laugh at the beginning when it was said the ratios are important and then the ingredients are measured instead of weighed. I was taught to weigh when the ratios are important. But it looks like it worked, so who am I to judge.
It's funny how much they talk about that custard bottom. Was never the highlight of a German pancake in my house growing up. Would never even thought of it as custard. It was all about the puff! And not just on the sides. Also we never added any of the extra stuff to the batter. Kept it simple: 1 cup flour, 1 cup milk, 4 eggs. Super hot oven with super hot melted butter in a cast iron or brownie pan. So yum! This variation is probably good too, just different. I recommend eating with lemon juice and powdered sugar!
As a German here is a fun fact... In the south, what we call a pancake is basically a thicker crepe. Then there is something like a jam filled donut (but without the hole in the middle) which we call Berliner. In Berlin / the area around it, what we call Berliner is called a pancake and what we call pancake here, is called egg cake there. :D However I have never seen the pancake like the one in the video and it looks so amazing!
I think this is more a Dutch Baby. My German mother, Oma, and Omi (great grandmother) all made German Pancakes. They were more like thick crepes, often filled with applesauce and/or jam/jelly. My mother preferred to make them with almond extract vs. vanilla extract. I LOVE German pancakes; but I’m sure I’d love this version from ATK as well.
@@sweeney60 It's more a Dutch Baby. Dutch Babies are an American invention. The problem with German and Dutch is simply that many people mistake Dutch for German. However, that is not the same. Incidentally, the Dutch may react more angrily to this mix-up than perhaps Germans - for historical reasons.
ATK often redesigns things to make it easier for the casual cook. In this case, they kept the apples out of the batter because of the massive moisture issue apples create. Not traditional but sooooo easy and delicious.

I travel quite a bit and have seen these on several menus in U.S. restaurants but they were always called Dutch Baby. I never noticed German pancake for some reason. Nonetheless, very tasty. 👍

No, you can have your popovers and German pancakes, they’re sweetened and flavoured. A Yorkshire pudding is an unsweetened and unflavoured version, these are just bastardised version of it. But the Yorkshire pudding did come first.
They are, but delicious in this form too. My Mother used to make yorkshire puddings for eating with the roast and then the rest we had afterwards with sugar, butter and lemon juice on them. Must revisit, feel nostalgia coming on!
Any pointers for those of us with standing pilots? Our oven sits at about 90º when off, and, I'm guessing, climbs in temperature much faster than electric. My plan on the next go 'round is to raise the temp by 70º every 5 minutes until 375° is attained, which hypothetically will give us 375° for the last 10 minutes.
Looks great ❤ Could I use a 13x9 Pyrex or a rectangular cake pan? My non-stick pans are cheap & the handle would most likely melt if I put it in the oven. I don’t have access to cast iron either
I'd never heard of a popover (except as a loose layer of clothing to popover an outfit). Google says it's basically a yorkshire pudding. I've seen dutch baby pancakes here in Australia but they're generally served from the back of a van at marketstalls and events. You get about ten 1.5" tiny pancakes with masses of sugar and lemon and no other discernible characteristics other than 'fried' (and overpriced).
My wife says that you got lucky! And, that only 1 in 25 pancakes rise to such perfection! To further defend your honor, I need to know the secret to consistently achieving a perfect crown. Is it the eggs, or the butter, or the flour? Please, tell me!

I did everything this recipe asked for but I added 1-2 tablespoons of lemon...the pancake became very thick and dense after 30 minutes...was the lemon the reason? no idea...now I have to remake without the added lemon to see...any ideas?
I tried this recipe and two issues popped up. 1. 6 eggs is too much, 3-4 should be sufficient. 2. I needed more time in the oven since the Dutch Baby only started to pop in the last 2 minutes of the end time. Other than that, a very good recipe.

I make a berry compote instead of apple. Blueberry or raspberry make a great compote for german pancake.

Cold oven was a game changer for me. Best topping thought is fresh lemon and powdered sugar together. (weird but amazing)

I'd never heard of a popover (except as a loose layer of clothing to popover an outfit). Google says it's basically a yorkshire pudding. I've seen dutch baby pancakes here in Australia but they're generally served from the back of a van at marketstalls and events. You get about ten 1.5" tiny pancakes with masses of sugar and lemon and no other discernible characteristics other than 'fried' (and overpriced).

I did everything this recipe asked for but I added 1-2 tablespoons of lemon...the pancake became very thick and dense after 30 minutes...was the lemon the reason? no idea...now I have to remake without the added lemon to see...any ideas?

I tried this recipe and two issues popped up. 1. 6 eggs is too much, 3-4 should be sufficient. 2. I needed more time in the oven since the Dutch Baby only started to pop in the last 2 minutes of the end time. Other than that, a very good recipe.
