Theroof just comes so far forward and so low that I have to lean on the steering wheel like grandma and crane my neck to see the lights if I'm first in line and stop where I'm supposed to.

That would ruin it in my opinion. Best to leave old cars as stock as possible.
Chevy didn’t have a V8 until 1955. Even the ‘53 and ‘54 Corvettes were inline 6-cylinder engines.
