I love the SNES. I like playing games on older consoles because the developers always had to work around the technical limitations of the consoles and it made for some really creative and interesting dev choices. The SNES to me is right at that intersection where it still has lots of limitations but the technical upgrades from the original NES allowed for way more variety and creativity in the games. I also love the music and sound of the console. The mix of retro chiptune and samples of recorded instruments/sound effects make for such a unique atmosphere.
I think it's important to consider that back then making games was way cheaper than it is now, so while there were no indie games, there were more big game studios than there are now, so there's more bad games as a result
Starfox and the like were made with the Super FX chip. It was ahead of its time in adding additional graphics power on the cartage and allowing SNES to have 3D rendered games. Yoshi's Island also uses the Super FX for additional power for scaling.
Awesome that you got Stunt Race FX by chance, it might not hold up that well today, but I'll always like it since this level of 3D is something very few SNES games have

The peak games for the SNES are still so good, especially Earthbound & Chrono Trigger. The NES is way past it now though.

The SNES is one of the best consoles ever created. FZero is a fantastic game. It’s a must-have for any SNES collection.
