A classic masterpiece recipe of White Sugar Rice Cake (Bai Tang Gao). Beautiful and delicious coffee-flavored white sugar rice cake. It's so easy that everyone can make perfect honeycomb inner texture.
Ingredients :
200g rice flour
400 ml water
120g castor sugar
13g instant coffee powder
1 tsp cooking oil
For Yeast Activation
1/2 tbsp castor sugar
30ml lukewarm water
1 tsp yeast
Pan size 18cm(ID) x 5.8cm(H)

It was perfect except that the coffe was so strong it tasted bitter. I guess you either decrease the coffee or increase the sugar. Not sure which is better.
Your coffee Bai Tang Kao taste yummy. Must I reduce the sugar quantity if I make it plain without coffee? Some of my family members doesn't take coffee. Please advise. Tq
Hi Catherine, you can omit coffee powder and also reduce sugar up to your personal liking, as long as you don't change the water to rice flour ratio. Thank you🙏
Hi, your coffee bao tang gao looks very yummy. If l want to make with gula melaka, how much of gula melaka do l use? Thank you so much!
Basically, this rice cake, flour to liquid ratio is 1 to 2. As long as that ratio is not vastly deviated by sugar aka "fake water", hence you can use Gula Melaka as replacement instead, as the quantity of it is very much subject to your personal liking. Thanks

Most likely your yeast has over its expiry period, do remember batter fermentation time must be 2 hours or more. Thanks
