    Loved the video. I had some "Pig Candy" recently and oh my!!! ... totally hooked. Have been thinking about buying a smoker... any suggestions on where/how to buy one? Any suggestions on learning the steps and recipes for successful smoking and lastly, roughly how long did you smoke the candy? Thanks for any/all suggestrions.

    Geat way to do the candied bacon, Chef Tom!! I use brown sugar and sprinkle Motley Que's Honey Habanero Seasoning over it. Its a thing of beauty!! Thanks for sharing this!!

    I made this today using Heatonist's Los Calientes Barbacoa hot sauce as the binder for a sweet heat variant. I must say, it's pretty amazing.

    That's the best stuff in the world the only other thing that's very comparable is if you're going to Candy pork belly but on my candied bacon after you get where you want your sweet I add chili flakes to mine want some yummy stuff that's it

    Is there a reason you don’t coat both sides with all of that yumminess? I assume because it would stick.

      Yes. And it makes the transfer from the rack to the parchment paper easier. You can build all the flavor you need on the one side. Thanks for watching.

      Set temps the same and follow the recipe!

    Ixnay on the maple, but brown sugar would be acceptable. Plain old sugar would be my choice, heavy on the black pepper - maybe some cayenne, smoked paprika, and cinnamon.

      No changes at all. We've been at this for six years so we didn't expect to really see a bump, and we haven't seen a decline either which was nice. :)
