Hi guys and happy Wednesday. I recorded this one last week, and it was a chill, fun & productive Friday. I came across a very interesting bread recipe that I had to try out. It is a protein-rich, gluten free & grain-free bread that was very easy to make. I didn't have high hopes for the taste but it actually was super yummy. I really enjoy when you send me pictures when you try out the recipes that I make in my videos so please send me pics if you try this one out! One of my best friends here in Copenhagen is moving back to Iceland and that got me to thinking about my friendships here in Copenhagen and I would love to hear if you guys have experienced something similar and how you reacted to it. You can use the egg yolks for buns or yeast cake!! Most recipes only have egg yolks and those are the best

I can totally relate on the friendship front. I recently ended a relationship of seven years and one of my biggest regrets is not investing in my friendships more during the relationship. Friendships usually outlast romantic relationships! And they’re also so joyful and important for your social life 🫶🏼

And this is totally off the topic but i just wanted to tell you that i went to Copenhagen for honeymoon last week! I had been really wanted to visit there since I started watching your TH-cam channel and finally dream came true! It was a beautiful, cozy and peaceful city as your video. I really like food( especially breads and coffee so good), people and atmosphere…!

I went to Scandinavian countries and I was really surprised at how well everyone spoke English. I want Japan to be like that too.

Thanks for your honesty and vulnerability in your friendships chat 💛 I moved to Copenhagen few months ago and even though the city offers so many opportunities to meet new people, it can take a lot of effort to invest in those relationships, create deeper bonds and find those people with whom you can be 100% yourself. hi hi, leftover yolks are great for pasta sauce!
if you cook some pasta (maybe gluten free if you want), keep a few cups of the cooking water, in a separate pan fry some garlic or bacon or veg or whatever you want, turn off the heat and then add the pasta, pasta water and egg yolks + some parmesan and whatever seasonings, it turns out super nice and creamy.
also homemade hollandaise sauce!
Fun fact: amitié means 'friendship' in French so it's so fitting for what you're discussing! As an expat, I totally get what you mean with friends/efforts to make friends but close friends will find you! Excited to go to CPH in July :)

I hope protein in bread won’t upset your guts and you’ll find that it’s not gluten that “bothers” your guts. 🤞🏽🤞🏽 protein aka gluten is the best thing in flour and especially products in Europe which are so healthy 🤞🏽🙏🏽

In regards to friendships and living abroad, I can definitely relate. I’ve been together with my bf for 2,5y and since I’ve met him I became a bit lazier to make friends and prefer his and my parents company over anybody. But I’m trying to be more social and get to know more people, it’s just very challenging cause I also have adhd and I get bored easily with people and conversations… especially in Europe I feel like everybody already has their group and are a bit closed, both in Belgium and now in Budapest I noticed that. But anyways I love watching you and your bf, I’m doing long distance and can’t wait to live together with my bf.
We love bread, and enjoyed your baking skills...we still go to an Italian "Bakery on Arthur Avenue" in the Bronx(New York State)...these bakeries have been on Arthur Avenue for GENERATIONS...you can google them...one day you might be in New York City(Consists of Manhattan, The Bronx, Staten Island, Brooklyn and Queens) and you can take a subway to Arthur Avenue and do your own taste-testing....You and Helgi(is this the right spelling...my GF and I cannot decide if it is right)...will live a LONG life with your healthy baking! Birta I can relate so much to your friendship situation. I had the same issue during my 4-year relationship during high school and early university and now too with my new boyfriend. Since I'm in a long-distance relationship now, I guess that makes it a bit more easier to make time for friends. But I still struggle with establishing close, fulfilling friendships where I can be truly myself.

Lately it's been taking a toll on us being away from family and our closest friends for nearly three years, so in a few months we're moving to Portugal. It's a hard decision either way, but trust your gut! 💖 This may even be a perfect time to try Paris like you've mentioned before 😉💖💖

Londoner in Stockholm here and I can say that birds of a feather DO flock together . It’s amazing to meet and have friends from everywhere when you move abroad but it’s not easy. Having a friend locally who speaks the same language and comes from the same culture definitely makes the experience sweeter x

wait birta the vunerability is so beautiful and appreciateddd you don't even know , i can 100% relate it gets a little lonely not having best friends around but rather only friends that you see when you make plans, but i always get so nervous that if i try ti show an interest in leveling up our connection it wont be resipricated or it will be like received as oversharing rather than vunrability but slowly trying to get out of head and be more open with my thoughts and those around me, we will find our girls
