I tried turning plywood once, the bowl came out very nicely. However, not sure if I used regular plywood or Baltic birch. It was some tough turning. But that was before I had carbide tools.
Birch ply is a whole different animal! I was thinking that very thing as I watched this. If he could turn something this nice with crappy construction ply, what could he do with the birch!
The design is lovely and the patterns the plywood makes are visually pleasing, but it seems too soft or too fragile to make a nice smooth finish. Great experiment, though 👍

I know you keep your rouges very sharp, since we seldom see chip out in your turning. Is the chip out in this piece because of the layering of the plywood?

If you'd use a bowl gouge you wouldn't get nearly as much splintering and tear out on the plywood. It would leave a much better finish.
It's a good example where the craftsmanship far exceeds the quality of the raw materials.
