The Mexican people are such a lovely, kind, and generous people! I have always found them to be very proud of their culture and their food. And, their food is AMAZING! Thanks for sharing this video, Paul!
As a Cornishman whos had a few ancestors travel to this part of the world (not entirely sure where) i love this, keeping tradition alive yet putting a mexican twist on things is strangely heartwarming. Kernow bys vyken, México por siempre.
I’m from that area and this is by far the most important regional dish along with Barbacoa. Pastes are the awesome! A paste with a jug of pulque. I love them.
I've been to Mineral del Monte before and can attest on the deliciousness of the pastes! Nearby, C.F. Pachuca was founded in 1901 by miners from Camborne and Redruth making it the oldest football club in the Americas.
There is a beach , village and inn that is 200 years old named after mexico in the penwith area of Cornwall I'm sure there are loads more also that I didn't see yet
I love videos that show the culture and history of towns like this, the warm Mexican people and their traditions! I love Spanish! Thank you Paul for those beautiful videos of your extensive culinary journey to your faithful team! Congrats🤩🥳
You could do a series on where the old British have settled. I had been in Venezuela overseeing rolling mill upgrade lasting 3 months. On leaving I arrived at Caracas Airport very early and chatted to the security. (They search bags of passengers leaving) They did not search me after a pleasant chat my boarding gate open so I joined the queue. Next thing I knew I was called across the arrival hall by security for help. There were 4 very white and redhead girls claiming to be Jamaican. So white in fact I say they could not go out in the sun. They all spoke English with a Scottish accent. But no Spanish. I was to be their translator. What the Airport Security wanted to know is why they were not black if they were Jamaican. I asked the girls why they were not black. After a chat with the girls it appears many years a large number of Scots inhabited a section of Jamaica and kept themselves to themselves never integrating with the locals. I explained the situation to the security and they were allowed on their way.
Mexican pie dough is much different than pasty dough and American pie dough. It looks like they use Mexican empanada dough but I can’t be sure. I’m curious as to which dough they use.
I think they use what we call "hojaldre" which is pretty much a croissant dough. The concept of empanada in Mexico is different, most parts in Mexico considers it an empanada when its fried and it can be either a corn/wheat dough. In central Mexico empanada is pretty much a synonym for pastes/pasties.

its not empanada dough. the empanadas hre are same as argentinian: doughy and fluffy while the pasty is bit closer to a croissant: flaky and buttery
I think they use what we call "hojaldre" which is pretty much a croissant dough.
