After pouring oil in the Sufuria/cooking pot,add some salt in it,wait for the oil to get hot before putting in the fish.This will prevent the fish meat not to stick at the bottom of the Sufuria. Also next time put two pieces of fish at a time,so that the fish can have enough space to cook properly because the size of your Sufuria is small. Good job

In Trinidad we make something similar to your Kachumbari. It's called Mother-in-Law and it's made as a side dish for mainly east indian weddings and its very spicy. The spicier it is, its said jokingly that's how much trouble your mother-in-law will give you. But you and Sylvia both have wonderful mother-in-laws.

Koree you must dry the fish with paper towel in and out so when you deep cry it won't pop and stick to the sufuria , you can also marinade it the night before with salt pepper and garlic and bread it before frying ,enjoy yr meal.blessings to all..🙏🏼

My grandpa use to cook fish with the heads on. He was the only person I knew that did this back years ago. My parents, siblings, and I always clean the fish we catch and cut the heads off prior to frying. We feed the fish heads to our cats. 😅 😅 If we buy from a fish market they will clean them and cut the heads off unless you ask them not to do so. Florida 🇺🇸
Koree next time you are doing fish marinate it with some lemon juice or vinegar and some salt then wash it off before frying. Also cut off the fins. That takes away the fishy scent/taste. You should have mixed some seasonings; black pepper, salt and a fish seasoning together with some flour, rub it on the fish and then fry.

Don't overcrowd the pan. 2 pieces would have been sufficient for the size of your frying pan. 2. Next time, after seasoning the fish, cover it very lightly with flower, and then fry it. But….. with all that salt, I had blood pressure issues this morning ! So next time I’m gonna tell Koree to maybe have my piece with no salt . But I believe the Kenyan people use a lot of salt in their foods . It’s always delicious

That's how we do it in Italy, we marinate it and then seasoning, flour or bread crumbs.

yep. that's how we do it here in the caribbean. the seasoning minimize the fresh fish scent and the flour prevents it from sticking when frying.
That's the same way we do it in Italy.

Try coating your fish in flour before frying. It will not lose so much of the meaty parts n season the flour. Meal looks great.
