Hey Becky, my method for skinning tomatoes is to cut them in half, cut out the core and put them on a baking sheet, cut side down. Put them under the broiler for a couple minutes and watch them, when they start to wrinkle take them out and the skins will just pinch right off. Super easy and way way faster than the water method!
Becky!!! I damn near had a heart attack when you switched the bowl for the pot of enchilada sauce! Calling my doc to increase my Zoloft dose tomorrow, lol! Thank you for being so positive and giving me something to look forward to, as well as keeping things in perspective. I am a nurse with parents who have and are battling major health crises, on top of the stress of COVID. You've inspired me to expand my garden, make homemade garlic powder (I currently have onions in the dehydrator on the porch to make onion powder), to learn about canning and to appreciate the products of all of my local farmers. If it weren't for these positive distractions, I don't know where I'd be emotionally, but I appreciate you, unknowingly, getting me through those dark days. As a side note, we struggled with infertility for years and then quite randomly became pregnant at the onset of Covid. Low and behold, your little miracle has a similar due date to mine, 12/11! Although she decided upon an earlier debut, Miss Mia Louise has brought me joy I had never known, and I know your little one will do the same! Sorry for the super long post, I just wanted you to know how much you've helped me over the last year. ❤️😊

My Grandpa had a pot this size and we knew that was his Sunday Sauce pot. The tomatoes, garlic and peppers all came from his garden. I was lucky to inherit this pot
I made my dad stop while driving because I saw a farmers food stand at the end of their property. I literally begged! So happy, I got fresh corn and cucumbers! so excited to eat them.
I love Becky’s passion regarding cooking and gardening. And, of course, how her eyes widen when she is thrilled with the flavours of what she is making. But … is anyone else absolutely back breakingly DAUNTED by the enormity of the tasks she sets herself constantly, like today? Mind boggling!
Dude I got tired watching this. And she was disappointed she didn’t get more done. I thought the enchilada sauce was a huge undertaking and then she started on the tomato sauce. And I was like she’s completely crazy. And then she was like ok now to start canning…and I was like this is wonder woman right here. There’s no way I could do it. Super impressive.

I’m never going to make enchilada sauce because I just don’t like it(I wish I did). But I would watch Becky make or do anything. She is just a joy to watch.
Have you ever tried making it from scratch? I know I can't stand the nasty stuff from a can at the grocery store...tastes like straight metal. Homemade sauce is a game changer....especially red sauce. I always assumed I just didn't like red sauce and boy was I wrong.
@@pattyhamm6291I know there are only like 2 maybe 3 varieties available to purchase but there are quite a few different sauces and styles of sauces if you go down the rabbit hole of Mexican sauces. You've got a classic red (guajillo) sauce, Ranchero sauce, various verde sauces, green and brown mole, crema sauce...and so on. I make an orange sauce that's a mix of roasted red and green sauce blended together with a little Chipotle added to it for smokiness, it really hits for chicken enchiladas, tacos and as a soup base.
I am loving the fact that almost every other day you have another video coming out. Im thinking with a baby on its way, you might want to spread out your video’s so you have something to run while you go without sleep that very first month. You can always interrupt some video’s that may be out of step with the actual date, with some holiday video’s that are current. Don’t forget to have some extra video put aside. You’ll need them once the baby arrives. ALSO, running things a bit behind schedule is also good for video’s when you announce your going on vacation. It’s best to make those announcements, AFter you’ve already gone and are back home. This one is more about safety. Love your Video’s !! Keep them Coming !!!

It's much easier to remove the seeds before you toast. You don't want the seeds, seeds will cause whatever you're making to turn bitter. Commonly used dry peppers you'll see in stores. Guajillo= Mirasol Chipotle= Jalapeño Ancho= Poblano Pacilla= Chilaca Mulato= differnt poblano variety & different level of ripeness New Mexico= Hatch Birds Eye= Thai California/Colorado= Anaheim Seco= Serrano
I have to disagree a bit. Some of the peppers change names depending upon how they are preserved which changes the flavor. For example, jalapeño fresh is very different from the smoked chipotle.
Becky, I commend you on sticking to your content of gardening and cooking etc. Most first time mothers bore people to death and all of a sudden their channels are about their baby or pregnancy etc. Keep up the great work.

That was such a thoughtful gift. And especially those spoons. I never would have thought to buy those to go with such a big pot and would have ended up bending a wire hanger and duct taping it to the end of the spoon and getting tomato sauce everywhere because of course I wouldn’t have realized until last minute when the sauce was bubbling over. Clearly I run into a lot of problems cooking because I don’t think of the small details 😅
Hey Becky, a little tip for peeling your tomatoes... Its extremely easy to peel frozen tomatoes. So just put a cross cut on the bottom of your tomatoes before you freeze them. And when you want to make your ketchup just take them out leave them for a few minutes and the peels come right off.
I just have to tell you that watching your videos gave me the confidence to finally use my pressure canner. All of my canning projects have been water bath until today. I pressure canned 14 quarts of bone broth!
I'm 60 yrs old, had never been around anyone that did any canning or gardening. I have gardened some but since I started watching all these food videos I got curious. I did buy the Presto Electric Pressure Canner earlier this year but I still haven't used it 😅 🙃 I'm such a ding dong.
A tip, use a small pot with a handle to scoop your sauce. A lot faster and then you don’t have to scoop one cup at a time. ☺️ the sauces look amazing btw!🥰

I always do 2 year canning so I can alternate my garden each year with what I plant. Makes it much easier with keeping stocked up on different canned items
I’m probably repeating something someone else has already said but your quartz counters are not as tough as your granite ones. They do stain but you can use soft scrub on them. Also, be careful about putting very hot pots or pans on them. Best to use a trivet or folded towel under them.
The seams between the tiles on the island would drive me nuts. Trying to scrub out the embedded flour, etc. I worked as a cook in restaurants before and absolutely lived the stainless steel counters....for ease of cleanup. But, of course it is a bit "industrial-looking."
I imagine that the island will be the first thing to go when they redo the kitchen. it just seems kind of in the way. you don't want your island to interrupt the flow of work.
My heart was dropping as you balanced the bowl of sauce on the edge of the container. Never seen a sauce master before, very cool. I just ran mine through a strainer last time.
Hey Becky, that pot is wonderful and such a sweet gift. Just to let you know, I am still using a stainless steel skillet that I got for a wedding present 55 years ago - and it is almost as shiny as your new one. Just use SOS or steel wool on it, and it will shine like new for decades to come.
OHHHH. And the Gazpacho I’ve had in the past, also had tiny pieces of tomato in it. So, It’s another way to use up your cucumbers, tomatoes and some Jalepenos

What you showed at the end reinforces the benefit you mentioned in this new house of having your kitchen separate from your living area. I also don’t like to look at messes or unfinished projects as they stress me out 😊. This video is very inspiring: shop/eat local, dirty a kitchen as few times as possible, 20x a recipe if you can - the sky is the limit! I look forward to adapting some of these principles, thank you for sharing.

Great video! ,Save and label those dried pepper seeds and grow them next year! I did that last year from the exact same brands of dried peppers you used, and they sprouted and grew beautifully! Hard to find those types of peppers in seed catalogues and you already know how good they are!

If you are in the UK a catering supplier like Nisbets has lots of huge-sized bowls and pans etc. They’re generally not cheap but they tend to be great quality.

I love watching you cook. When you said you were going to twenty times the enchilada sauce recipe my jaw dropped. I'm really glad others have mentioned that quartz is not heat resistant. I've heard of folks cracking their quartz just by using an air fryer on them.
I just bought an air fryer and that's the first thing I looked up. I found a $3 wood cutting board at a thrift store, and my air fryer now lives on that. Cracking my quartz would have seriously ticked me off.

Just a tip and we used to do this in the canning cookbook that we always used and it looks like you print out your recipes each year so if you've got a journal or something mark down how big of a batch will fit in your large pot. It's just helpful to you you don't have the guessing games if you're doing you know 20 times your recipe mark down someplace that you can do 20 times that recipe in that pot which looks like this is going to be a long-term pot in your kitchen. Also markdown along with that any ideas that you think you could have done a little better on it or add a little more something or a little less something so you've got to running commentary

I’ve also been freezing sandwiches and breakfast items for my husband- so convenient! I also canned stew, chicken and beef broth, salsa, and 3 different jams. I’m hoping to find a good farmers market nearby for tomatoes and tomatillos as we are huge Mexican food fans!
Go for it! I can everything Mexican that I can get away with! Birria, Chile Verde, Al Pastor Pork, Chile Colorado, meats and broth for tamales and any kind of salsa/hot sauce you can think of. Makes life so much easier and saves us so much money and time staying at home for our favorites instead of going out.

Food allergies suck! I carry 2 pens because of allergies to things like coconut, fish oil. Coconut is popping up in a lot of things these days. For your daughter, tomatoes are a difficult thing to substitute. Is she allergic to them raw AND cooked? I can't have them raw, but once cooked or acid denatured (lemon juice), I can have them. I bought and bottled an additional 25 lb of tomatoes yesterday. Then last night Covid hit, so I managed to wash the jars and rings this morning and my food dehydrator. The rest of today is resting. You're such an energetic person! Love watching your canning videos.

I think it’s so interesting to see how many variations of enchilada sauces are out there, and it’s awesome!! I was born and raised in New Mexico where red and green Chile is grown in abundance. Enchiladas is definitely a FAVORITE in our home, and I usually make them once a week. LOL I currently live in Arizona and have been fortunate to find the Chile we love! You can also find YOUNG GUNS Hatch green Chile in the freezer section of Fry’s, Walmart and I believe Albertsons. I keep it on hand too. I hope that helps.

Hi Becky. With some of my tomatoes, I made tomato sauce in my slow cooker. I took off the stems,& core, cut of the tomatoes. Cut them into 4, add red onions, & yellow onions, added my frozen peppers. Yellow, green, red, orange colored peppers. Put them into the bowl, add your spices. Mine are Clubhouse Italian Seasoning with the red lid only, rosemary, garlic powder, onion powder, oregano, basil, turmeric, salt, no pepper due to my deadly allergy to pepper spices.

Hi Becky. It always makes my day to see one of your video's up to watch. You know, when you make your ketchup and remove the peels of the tomatoes, you can freeze dry tomatoe peels and make them into a powder for soups and other tomatoe products. You can even reconstitute them in some water and make tomatoe paste. BTW, they chili's you couldn't pronounce are said like: Gwa hee oh . There is a YT channel called Views on the Road where two hispanic sisters cook and share their recipes for classic and traditional mexican food recipes. You should give them a look see, you might find some other recipes you might love as well. Mole' sauce is another traditional mexican sauce when made at home is a staple and wonderful. What a productive day! The powdered pulp would make a great Mexican rice add in, it's basically sazón minus the chicken bullion. My husband took me on a date to the local farmer's market this morning and was like so that's why you were so interested in the home canned sauces😂
My family is from Albuquerque, NM and I would have told you the only chilis that are used in enchilada sauce are from Hatch, NM. I legit had no idea you could or should make a mix of chilis! And seriously that sauce master is genius. Ive never known anyone who had one and straining the sauce makes this labor of love a nightmare. I'm so excited you were able to make so much of it so quickly! I was also shocked how quickly you were able to make that tomato sauce, Those dried tomatoes are totally a game changer. Can't wait to see your next project!

AND...it also allows for different crops in the garden so you can rotationally garden and keep pests under control!! Love the taste tests!!
I made this today with one and a half 5-buckets of tomatoes and boiled it up outside on a woodfire and giant wok. I strained the tomatoes first. This stuff is delicious! I also added finely chopped cilantro. Used an electric water bath canner for 40 minutes. Thanks so much for sharing the process and your enhanced recipe.
I have that pot. It's amazing for w.b. And making huge bone broth batches too. My hens love frozen bone broth and lay all summer in 110 degree heat. They have fans too
Hi, in case you don’t know, you can use a kitchen aid attachment to run fresh tomatoes in. It will strain them separating the seeds/skins from the juice in minutes vs hours. Then you can make tomato paste or tomato powder with the skins/seeds. There are several TH-cam videos.
This was so cool to watch. I think I have wayyyy over-worked some steps in my preparation for canning. Everything doesn't have to be perfect (e.g. skinning the tomatoes) to still get a good product. I am so going to make my own enchilada sauce. I'm also glad the strained pepper/seed/skin product is going to be used for seasoning....I was thinking "that stuff could be gold" when Becky said she had plans for it. Becky rules again!

Would you consider doing a video showing (and maybe demonstrating) the difference between the electric canner, the stove pressure canner and the other on you used on the stove, the big black pot (you used to to blanch your corn) The pros\cons of each canning method, how long the food will last using each method. Like canner indepth special 😂😂

I got a Warner tomato processor that I replaced the sauce master.. It’s heavy so sits on the counter & can process tomatoes (removes the seeds & skins) awesome tool in minutes & easy to clean! Made a huge diff in making anything tomatoes & berries.
Becky love all the wonderful recipes. In New Mexico we make red Chile sauce with a garlic, salt and the red Chile pods. We rehydrate the peppers and blend and run through a colander to take the seeds and peelings out but we love hot 😁🥰 we then layer with corn tortillas and cheese. It is often served with pinto beans and Spanish rice
Wow girl, you just kept going like the energizer bunny! That looks delicious. That dark color, I can tell that is going to be delicious. What a great idea with your dried tomatoes. It made that thicken up very fast. My kitchen is so small it really stops me from doing big batches for canning. Last year I did can 2 years of tomato sauce and diced tomatoes. It's a good thing because this was a horrible year for the garden. We planted green beans 3 times and they are still not going to produce a crop. 2 years ago we put up 130 quarts of beans. I think I'm going to run out before we have a chance to can up more. Some years are like that. That's why I love big batches of product. BTW I love watching you cook, you are smooth as silk.
Becky, I loved watching today’s canning video. My only problem is when I see you pick up and move those unbelievably full bowls of tomato purée/juice and then you carry it somewhere!!! I can see myself jiggling the pan and then dumping that beautiful sauce all over the place. Thanks for all of your inspiration.

I just started canning a bit this year. I bought a water bath canner and then asked for a pressure cooker for my bday. I was scared to do it at first. Made 2 batches of corn in it and it was way easier than I expected!
Hi Becky! We made our own ketchup...we sliced de tomatos and put in a cooking pot (for this first step you can use a instant pot, 15-20 min) until all of them are cooked through. Then you have to use a strainer to separate de tomato juice from seeds and peel (it's important not to blend this because the seeds and the peels affect the flavour). Next, you put the juice in a sauce pan to continue the cooking until you see the bottom of the pan...at that stage you have to add the condiments (for 10 kilos or ~20 pounds of tomato you may use 1-2 cup of white vinegar, 1 cup of white sugar, ¼ cup of Worcestershire sauce, salt and pepper to taste)
Just in case you want to know how to pronounce guajillo chili peppers, here goes. Gua -WA (as in "wash"), ji -he, llo -yo (as in yo-yo). Another wonderful video. Thank you so much for all the work you do to share with us. Be well, stay safe, love from Texas.
My Aunt Vera would put chicken stock in her homemade enchilada sauce! It looks beautiful! I'm excited all my beginner canning stuff came in and have been washing tomatoes and going to make my first batch of canned salsa! And then I'm going to attempt to make my grandkids a fruit sauce from our appletree and the mangos I just bought. You're inspiring Becky!
I would do some tomato soup. That would be a tasty addition to your pantry. You could always do a tomato bisque concentrate that you add heavy cream to after you open the jar and go to heat it up. That would be a huge time saver. I use enchilada sauce when I make a Mexican rice. Add enchilada sauce and chicken stock as the liquid for the rice, salt as well as some cumin and you get that delicious Mexican type rice. Yum. Girl, you got a LOT done! Whew, wore me out watching. LoL Great job.
@@pennynickels5216 Sauté 1 large onion, 2 stalks of celery and 1 good size carrot- peeled, finely diced in olive oil at medium heat with 1 T kosher salt and 2 tsp pepper until translucent (onions) add 2-3 Tablespoons Arborio rice and continue to sauté for 5-10 min. Add 2 Tablespoons tomato paste and as many cloves of garlic that you like. For me that’s about 3-4 good sized ones grated over a fine microplane or crushed, and sauté until the paste deepens in color. Add 1 large can or 2 small cans crushed tomatoes and 1 container chicken stock or homemade. Cook over medium heat for about 30 min and check seasoning. You may need to add a teaspoon of sugar to offset the acid in the tomatoes. I add 1-2 teaspoons of onion powder and garlic powder. Purée soup with a stick blender (easiest) or a blender and add 3/4- 1 cup of heavy cream. Stir and taste for seasoning. Serve with fresh grated Parmesan cheese.
I loved how you used dehydrated tomatoes to make paste to thicken the sauce. I also love the tomato/onion/garlic base, great idea to have on hand for homemade fast food! If I can get enough tomatoes I’m definitely dehydrating some for this purpose. Great inspiration, thanks for all you do!

My enchilada sauce is a different recipe. We love the green enchilada sauce much better than the red. I did marinara sauce last year instead. Still working through those.
Got that sciatica problem also. Im learning to do my stretches EVERYDAY! I walk three days out of the week .I got a round soft fluffy Frisbee thingy I sit on from the chiropractor. Lol I'm also getting a massage once a month

Hey Becky, my method for skinning tomatoes is to cut them in half, cut out the core and put them on a baking sheet, cut side down. Put them under the broiler for a couple minutes and watch them, when they start to wrinkle take them out and the skins will just pinch right off. Super easy and way way faster than the water method!

Becky!!! I damn near had a heart attack when you switched the bowl for the pot of enchilada sauce! Calling my doc to increase my Zoloft dose tomorrow, lol! Thank you for being so positive and giving me something to look forward to, as well as keeping things in perspective. I am a nurse with parents who have and are battling major health crises, on top of the stress of COVID. You've inspired me to expand my garden, make homemade garlic powder (I currently have onions in the dehydrator on the porch to make onion powder), to learn about canning and to appreciate the products of all of my local farmers. If it weren't for these positive distractions, I don't know where I'd be emotionally, but I appreciate you, unknowingly, getting me through those dark days. As a side note, we struggled with infertility for years and then quite randomly became pregnant at the onset of Covid. Low and behold, your little miracle has a similar due date to mine, 12/11! Although she decided upon an earlier debut, Miss Mia Louise has brought me joy I had never known, and I know your little one will do the same!

Have you ever tried making it from scratch? I know I can't stand the nasty stuff from a can at the grocery store...tastes like straight metal. Homemade sauce is a game changer....especially red sauce. I always assumed I just didn't like red sauce and boy was I wrong.

@@pattyhamm6291I know there are only like 2 maybe 3 varieties available to purchase but there are quite a few different sauces and styles of sauces if you go down the rabbit hole of Mexican sauces. You've got a classic red (guajillo) sauce, Ranchero sauce, various verde sauces, green and brown mole, crema sauce...and so on. I make an orange sauce that's a mix of roasted red and green sauce blended together with a little Chipotle added to it for smokiness, it really hits for chicken enchiladas, tacos and as a soup base.

I am loving the fact that almost every other day you have another video coming out. Im thinking with a baby on its way, you might want to spread out your video’s so you have something to run while you go without sleep that very first month. You can always interrupt some video’s that may be out of step with the actual date, with some holiday video’s that are current. Don’t forget to have some extra video put aside. You’ll need them once the baby arrives.
ALSO, running things a bit behind schedule is also good for video’s when you announce your going on vacation. It’s best to make those announcements, AFter you’ve already gone and are back home. This one is more about safety. Love your Video’s !! Keep them Coming !!!

For all of us out there wondering about the chili Becky mentioned- GWAH-HEEYOH. They are dried mirasol chilies and soo versatile in Mexican cuisine
It's much easier to remove the seeds before you toast. You don't want the seeds, seeds will cause whatever you're making to turn bitter.
Commonly used dry peppers you'll see in stores.
Guajillo= Mirasol
Chipotle= Jalapeño
Ancho= Poblano
Pacilla= Chilaca
Mulato= differnt poblano variety & different level of ripeness
New Mexico= Hatch
Birds Eye= Thai
California/Colorado= Anaheim
Seco= Serrano
I have to disagree a bit. Some of the peppers change names depending upon how they are preserved which changes the flavor. For example, jalapeño fresh is very different from the smoked chipotle.

That was such a thoughtful gift. And especially those spoons. I never would have thought to buy those to go with such a big pot and would have ended up bending a wire hanger and duct taping it to the end of the spoon and getting tomato sauce everywhere because of course I wouldn’t have realized until last minute when the sauce was bubbling over. Clearly I run into a lot of problems cooking because I don’t think of the small details 😅

Hey Becky, a little tip for peeling your tomatoes... Its extremely easy to peel frozen tomatoes. So just put a cross cut on the bottom of your tomatoes before you freeze them. And when you want to make your ketchup just take them out leave them for a few minutes and the peels come right off.
I cut the stem out also before freezing.

I use my Omega juicer. It's an easy way to peel and remove seeds.
I just have to tell you that watching your videos gave me the confidence to finally use my pressure canner. All of my canning projects have been water bath until today. I pressure canned 14 quarts of bone broth!

I'm 60 yrs old, had never been around anyone that did any canning or gardening. I have gardened some but since I started watching all these food videos I got curious. I did buy the Presto Electric Pressure Canner earlier this year but I still haven't used it 😅 🙃 I'm such a ding dong.
Pressure canning is so easy really. Way easier than water bath tbh
A tip, use a small pot with a handle to scoop your sauce. A lot faster and then you don’t have to scoop one cup at a time. ☺️ the sauces look amazing btw!🥰

I’m probably repeating something someone else has already said but your quartz counters are not as tough as your granite ones. They do stain but you can use soft scrub on them. Also, be careful about putting very hot pots or pans on them. Best to use a trivet or folded towel under them.
The seams between the tiles on the island would drive me nuts. Trying to scrub out the embedded flour, etc. I worked as a cook in restaurants before and absolutely lived the stainless steel counters....for ease of cleanup. But, of course it is a bit "industrial-looking."

I imagine that the island will be the first thing to go when they redo the kitchen. it just seems kind of in the way. you don't want your island to interrupt the flow of work.

Hey Becky, that pot is wonderful and such a sweet gift. Just to let you know, I am still using a stainless steel skillet that I got for a wedding present 55 years ago - and it is almost as shiny as your new one. Just use SOS or steel wool on it, and it will shine like new for decades to come.

What you showed at the end reinforces the benefit you mentioned in this new house of having your kitchen separate from your living area. I also don’t like to look at messes or unfinished projects as they stress me out 😊. This video is very inspiring: shop/eat local, dirty a kitchen as few times as possible, 20x a recipe if you can - the sky is the limit! I look forward to adapting some of these principles, thank you for sharing.

Great video! ,Save and label those dried pepper seeds and grow them next year! I did that last year from the exact same brands of dried peppers you used, and they sprouted and grew beautifully! Hard to find those types of peppers in seed catalogues and you already know how good they are!

If you are in the UK a catering supplier like Nisbets has lots of huge-sized bowls and pans etc. They’re generally not cheap but they tend to be great quality.

I love watching you cook. When you said you were going to twenty times the enchilada sauce recipe my jaw dropped. I'm really glad others have mentioned that quartz is not heat resistant. I've heard of folks cracking their quartz just by using an air fryer on them.
I just bought an air fryer and that's the first thing I looked up. I found a $3 wood cutting board at a thrift store, and my air fryer now lives on that. Cracking my quartz would have seriously ticked me off.

Just a tip and we used to do this in the canning cookbook that we always used and it looks like you print out your recipes each year so if you've got a journal or something mark down how big of a batch will fit in your large pot. It's just helpful to you you don't have the guessing games if you're doing you know 20 times your recipe mark down someplace that you can do 20 times that recipe in that pot which looks like this is going to be a long-term pot in your kitchen. Also markdown along with that any ideas that you think you could have done a little better on it or add a little more something or a little less something so you've got to running commentary

You’ve inspired me to cook more, and freeze goodies and meals. So far I’ve frozen cookies, two cakes and two types of freezer meals. I’ve also been freezing sandwiches and breakfast items for my husband- so convenient! I also canned stew, chicken and beef broth, salsa, and 3 different jams. I’m hoping to find a good farmers market nearby for tomatoes and tomatillos as we are huge Mexican food fans!
Go for it! I can everything Mexican that I can get away with! Birria, Chile Verde, Al Pastor Pork, Chile Colorado, meats and broth for tamales and any kind of salsa/hot sauce you can think of. Makes life so much easier and saves us so much money and time staying at home for our favorites instead of going out.

Food allergies suck! I carry 2 pens because of allergies to things like coconut, fish oil. Coconut is popping up in a lot of things these days.
For your daughter, tomatoes are a difficult thing to substitute. Is she allergic to them raw AND cooked? I can't have them raw, but once cooked or acid denatured (lemon juice), I can have them.

I bought and bottled an additional 25 lb of tomatoes yesterday. Then last night Covid hit, so I managed to wash the jars and rings this morning and my food dehydrator. The rest of today is resting.

I think it’s so interesting to see how many variations of enchilada sauces are out there, and it’s awesome!! I was born and raised in New Mexico where red and green Chile is grown in abundance. Enchiladas is definitely a FAVORITE in our home, and I usually make them once a week. LOL I currently live in Arizona and have been fortunate to find the Chile we love! @@livingthroughthechaos we get Hatch, New Mexico green Chile from VERTUCCIO FARMS in Mesa, AZ. We bought 90lbs about 2 years ago, and I still have a bit left in my freezer. You can also find YOUNG GUNS Hatch green Chile in the freezer section of Fry’s, Walmart and I believe Albertsons. I keep it on hand too. I hope that helps.

Hi Becky. With some of my tomatoes, I made tomato sauce in my slow cooker. I took off the stems,& core, cut of the tomatoes. Cut them into 4, add red onions, & yellow onions, added my frozen peppers. Yellow, green, red, orange colored peppers. Put them into the bowl, add your spices. Mine are Clubhouse Italian Seasoning with the red lid only, rosemary, garlic powder, onion powder, oregano, basil, turmeric, salt, no pepper due to my deadly allergy to pepper spices.
And what a great idea with the pulp. Nothing goes to waste. I wish I could afford a freeze dryer. In the meantime, I use my Excalibur dehydrator.

Hi Becky. It always makes my day to see one of your video's up to watch. You know, when you make your ketchup and remove the peels of the tomatoes, you can freeze dry tomatoe peels and make them into a powder for soups and other tomatoe products. You can even reconstitute them in some water and make tomatoe paste. BTW, they chili's you couldn't pronounce are said like: Gwa hee oh . There is a YT channel called Views on the Road where two hispanic sisters cook and share their recipes for classic and traditional mexican food recipes. You should give them a look see, you might find some other recipes you might love as well. Mole' sauce is another traditional mexican sauce when made at home is a staple and wonderful. What a productive day! The powdered pulp would make a great Mexican rice add in, it's basically sazón minus the chicken bullion. My husband took me on a date to the local farmer's market this morning and was like so that's why you were so interested in the home canned sauces😂

My family is from Albuquerque, NM and I would have told you the only chilis that are used in enchilada sauce are from Hatch, NM. I legit had no idea you could or should make a mix of chilis! And seriously that sauce master is genius. Ive never known anyone who had one and straining the sauce makes this labor of love a nightmare. I'm so excited you were able to make so much of it so quickly! I was also shocked how quickly you were able to make that tomato sauce, Those dried tomatoes are totally a game changer. Can't wait to see your next project!
Thanks for sharing your canning day! It is a lot of work!I can the same: I can enough so that I only have to can each item every other year. My Grandmothers canned the same as well. AND...it also allows for different crops in the garden so you can rotationally garden and keep pests under control!! Love the taste tests!!
I made this today with one and a half 5-buckets of tomatoes and boiled it up outside on a woodfire and giant wok. I strained the tomatoes first. This stuff is delicious! I also added finely chopped cilantro. Used an electric water bath canner for 40 minutes. Thanks so much for sharing the process and your enhanced recipe.

I have that pot. It's amazing for w.b. And making huge bone broth batches too. My hens love frozen bone broth and lay all summer in 110 degree heat. They have fans too
I peeled my tomatoes and then dehydrated the peels and then blended them into powder and added them back to thicken my sauce. It worked fabulously.
Hi, in case you don’t know, you can use a kitchen aid attachment to run fresh tomatoes in. It will strain them separating the seeds/skins from the juice in minutes vs hours. Then you can make tomato paste or tomato powder with the skins/seeds. There are several TH-cam videos.
Squeezo strainers are great for that too.

This was so cool to watch. I think I have wayyyy over-worked some steps in my preparation for canning. Everything doesn't have to be perfect (e.g. skinning the tomatoes) to still get a good product. I am so going to make my own enchilada sauce. I'm also glad the strained pepper/seed/skin product is going to be used for seasoning....I was thinking "that stuff could be gold" when Becky said she had plans for it. Becky rules again!

Would you consider doing a video showing (and maybe demonstrating) the difference between the electric canner, the stove pressure canner and the other on you used on the stove, the big black pot (you used to to blanch your corn) The pros\cons of each canning method, how long the food will last using each method. Like canner indepth special 😂😂

I got a Warner tomato processor that I replaced the sauce master.. It’s heavy so sits on the counter & can process tomatoes (removes the seeds & skins) awesome tool in minutes & easy to clean! Made a huge diff in making anything tomatoes & berries.
Becky love all the wonderful recipes. In New Mexico we make red Chile sauce with a garlic, salt and the red Chile pods. We rehydrate the peppers and blend and run through a colander to take the seeds and peelings out but we love hot 😁🥰 we then layer with corn tortillas and cheese. It is often served with pinto beans and Spanish rice
Wow girl, you just kept going like the energizer bunny! That looks delicious. That dark color, I can tell that is going to be delicious. What a great idea with your dried tomatoes. It made that thicken up very fast. My kitchen is so small it really stops me from doing big batches for canning. Last year I did can 2 years of tomato sauce and diced tomatoes. It's a good thing because this was a horrible year for the garden. We planted green beans 3 times and they are still not going to produce a crop. 2 years ago we put up 130 quarts of beans. I think I'm going to run out before we have a chance to can up more. Some years are like that. That's why I love big batches of product. BTW I love watching you cook, you are smooth as silk.
Becky, I loved watching today’s canning video. My only problem is when I see you pick up and move those unbelievably full bowls of tomato purée/juice and then you carry it somewhere!!!
I can see myself jiggling the pan and then dumping that beautiful sauce all over the place.

I just started canning a bit this year. I bought a water bath canner and then asked for a pressure cooker for my bday. I was scared to do it at first. Made 2 batches of corn in it and it was way easier than I expected!

Hi Becky! We made our own ketchup...we sliced de tomatos and put in a cooking pot (for this first step you can use a instant pot, 15-20 min) until all of them are cooked through. Then you have to use a strainer to separate de tomato juice from seeds and peel (it's important not to blend this because the seeds and the peels affect the flavour). Next, you put the juice in a sauce pan to continue the cooking until you see the bottom of the pan...at that stage you have to add the condiments (for 10 kilos or ~20 pounds of tomato you may use 1-2 cup of white vinegar, 1 cup of white sugar, ¼ cup of Worcestershire sauce, salt and pepper to taste)

My Aunt Vera would put chicken stock in her homemade enchilada sauce! It looks beautiful! I'm excited all my beginner canning stuff came in and have been washing tomatoes and going to make my first batch of canned salsa! And then I'm going to attempt to make my grandkids a fruit sauce from our appletree and the mangos I just bought. You're inspiring Becky!
I would do some tomato soup. That would be a tasty addition to your pantry. You could always do a tomato bisque concentrate that you add heavy cream to after you open the jar and go to heat it up. That would be a huge time saver.
I use enchilada sauce when I make a Mexican rice. Add enchilada sauce and chicken stock as the liquid for the rice, salt as well as some cumin and you get that delicious Mexican type rice. Yum.

@@pennynickels5216 Sauté 1 large onion, 2 stalks of celery and 1 good size carrot- peeled, finely diced in olive oil at medium heat with 1 T kosher salt and 2 tsp pepper until translucent (onions) add 2-3 Tablespoons Arborio rice and continue to sauté for 5-10 min. Add 2 Tablespoons tomato paste and as many cloves of garlic that you like. For me that’s about 3-4 good sized ones grated over a fine microplane or crushed, and sauté until the paste deepens in color. Add 1 large can or 2 small cans crushed tomatoes and 1 container chicken stock or homemade. Cook over medium heat for about 30 min and check seasoning. You may need to add a teaspoon of sugar to offset the acid in the tomatoes. I add 1-2 teaspoons of onion powder and garlic powder. Purée soup with a stick blender (easiest) or a blender and add 3/4- 1 cup of heavy cream. Stir and taste for seasoning. Serve with fresh grated Parmesan cheese.
I loved how you used dehydrated tomatoes to make paste to thicken the sauce. I also love the tomato/onion/garlic base, great idea to have on hand for homemade fast food! If I can get enough tomatoes I’m definitely dehydrating some for this purpose. Great inspiration, thanks for all you do!

Love your new kitchen!! Wish I got any tomato harvest but we didn’t. I also have had sciatica and other problems this year. But it’s so much fun to watch you do your canning. My enchilada sauce is a different recipe. We love the green enchilada sauce much better than the red. I did marinara sauce last year instead. Still working through those.
Got that sciatica problem also. Im learning to do my stretches EVERYDAY! I walk three days out of the week .I got a round soft fluffy Frisbee thingy I sit on from the chiropractor. Lol I'm also getting a massage once a month
My son joined me in watching your video tonight (he is 3.5 years old) and when you started putting the Enchilada sauce through that sauce master, he said "I want to make a volcano too!" 😂 he thought it looked like one of those volcano experiments! He has now watched 2 of your videos with me and he is hooked like me! They really calmed him down and I think this will be a new routine for us.
