The French had a dish called Rôti sans Pareil (with 17 birds). A reduced version of this was introduced by the French into New Orleans, called Turducken, composed of Turkey duck, and chicken with different types of stuffing between the layers. It is really yummy, and is very popular in the southeastern United States for Thanksgiving. Do you think this sort of roast might have been introduced into into Britain by the Normans? Great job that you did it for charity.
Not totally sure but i believe it originated with some of the huge grosse pieces made during the Middle Ages or possibly from some of the legendary Roman Feasts. Truthfully i don’t know if we will ever know its true origins.

It's common to roast larger parts of meat from cows, or whole pigs. Would chicken overcook using one of those methods?
There is a better way to cook it. Its underground. Better flavor to be honest. Other countries do it with their meats cooking underground. ☺
