first time we copy the data from source (with 5 columns ) to destination , 2nd time source (with 7 columns ) what happens when the destination is sql and adls case?
Can you clarify you issue a bit? If I understood correctly there could be new columns in the source? If source is relational database and supports using query for reading the data I would use it and define the columns that I want.

Yep ADF UI tends to change, but usually the functionality stays the same :)
