Even after 24 hours of dehydration, I put my fruits in my desiccation chamber for a couple days, then my jars all have sachets full of desiccant. Maybe it's overkill, but at least I'm not topping the jars off with CO2 yet for long term storage. I have some B+ that are over ten years old. I'm a little bit worried because of years of bro science indoctrination attempts... but I'm going to make a technical lemon smoothie and I'm thinking I should maybe... maybe, go higher than 3.5 because the flavor may have faded, but if they still taste as good as they originally did, 5g would add too much umami and I would have a possible difficult culinary event. We'll see. They still taste delicious and are as health inducing even at tiny amounts. I figure If I can still clearly taste the flavonoids at 100mgs after 10+ years, I don't want to accidentally be a hero and make my smoothie too delicious.
After realizing how much we over-complicate things, I tried to do the simplest possible and also the thing I would think would be most destructive to the flavinoids, so I put them out in the sun to dry. It's hot as fuck where I live so it was like 90 degree air and then the sun heating the fruits up way beyond that, and the worst part is the UV light which completely destroys these compounds pretty much instantly in aqueous and powder forms. It dried them surprisingly well, I didn't use any silica gel or anything and just put them in a sandwich baggie (not even ziplock) and set them in a dark cabinet for a few years. When I took them out and tested them, they were just as flavorful as any other from that isolate. I did not expect that result at all, I was terrified since I grow plants so my house is at like 50-60RH all the time and they should have just soaked up enough water to degrade in all those years (about 4 years I think?) I still use silica gel in my storage containers, but only because sometimes I screw up and think a batch is completely dry but really I had added a few things to the dehydrator and forgot they weren't all in there for the same amount of time. But I'm not worried that totally dry fruits are going to soak up normal household humidity levels in storage.

Best mycology channel!! (I’ve done exactly everything you said in this video ). I have a question I have just started growing my own mushrooms. My first one was Jedi mind everything worked out good. I went to drive them at 155 until they were cracker dry. And I didn’t get any effects when I eat them. The second flush, I dried them in the air and that worked but now a week later they’re not working again. I guess my question is why is this happening? I’m taking the same dose or more with no effects and then sometimes it does work.
For the second flush, it stopped working because there was moisture still left in them when you stored them. That’s why you want to dry them fast and quick.
This way you can keep the delicious flavour in them long term. Flavourless flushes suck, and that’s why farms use the best cultures around to make sure they are all tasty enough for sale.
@@Mycophilia thank you for the answer. I had around 80ish grams dry and it was a waste. They didn’t have an effect even taking 30 grams. But some I only took 1 gram and it was way stronger
I seem to be having the same problem. I don't know what I did wrong. I sent them to the dehydrator immediately at 160 degrees for 20 hours and felt nothing after eating 4.5 grams.
I was supposed to dry at 140 F for 24 hours but accidentally left at 175 F for 6-7 hours and than switched back to 140 for the remaining time thereafter. I guess 10 degrees more than your recommended setting is fairly negligible. Thank you for posting this great information!
honestly I love the euphamism in this video, like we all know what is meant, but yeah we're chasing that Umami guys. I wanna grow a nice batch of shitake for my dashi of the gods XDXD
I’m a beginner and I’m worried that I’ll over do the drying process. So I was wondering if you have a method to tell when the mushrooms are REALLY cracker dry?
@@astranglylargehotdog9970 I know you posted this a year ago but for all reading this today. If you are a beginner, then ESPECIALLY listen to what I say in this video. I sometimes go 48 hours with this method and it’s completely fine. LISTEN. TO. THE. VIDEO. Don’t make the typical beginner mistake of thinking you know better 😅
I already dried my mushrooms on cardboard. I just got my dehydrator in the mail. Should I still dry them in the dehydrator? I just realized I didn’t get a dehydrator with a fan, so it’s no good to use?
The sad thing is, many times I thought I‘d dried my shrooms enough only to reach into the jar and feel they are spongy. Do not re-heat or re-dry. This reduces potency significantly to almost worthlessness, so better to overdry than underdry. I’m still struggling with this aspect. Once my dehydrator is done, I wait a couple hours to see if the shrooms stay cracker dry. Many times they go spongy again.
Oven at 170, door crack open with a small fan blowing through the crack in the door works great also. It’s all about heat and airflow. Dehydrator is definitely top notch though.
You can just set up a little diving board off the front of the stove over the oven door by setting something heavy on a cookie cooling rack or something with metal mesh like that and the hot air from the oven will rise through the fruits without a fan. This is also a handy setup for doing sterile work on instead of a flow hood. The hot air coming out of an oven above 250C is sterile.
For larger fruit, do you recommend cutting the caps off or splitting up the stem like some people do if dehydrating this way in the video? I am in no rush for them to dry quickly.
1st timer here. I appreciate all the info, for reals. You have helped me tremendously in my journey. I just harvest my mushrooms and put them in my dehydrator right away. I ended up putting a lot of the smaller pins at the top. After above 6-7 hrs at 160, a lot of the ones on the top turner pretty much black so i pulled them off. Did i over do it? Did i ruin them? 😢
Great vid! So if I have s huge harvest and it doesn't all fit in the dehydrator, can the 2nd or 3rd batch wait in standby in the fridge until the first batch is done?
Slicing will oxidize more flavonoids as you’re exposing more surface area to the open air. If space is an issue, I like to lay the fruit on my palm, and gently lay the cap down with my other palm. One part of the cap will disconnect from the stem, but some should still be connected so that you’re not completely separating them (cap and stem).
Hello! I have a few questions as I am learning more about mycology. I adore Paul Stamets and his passion for this field so it encouraged me to view videos and read articles about growing medicinal mushrooms. Could I get in contact with you to ask a few questions off of TH-cam. I’m not sure if they sensor or monitor. Thank you!!
@@ashleyjones112 hey Ashley, thanks for your interest :) I only do private questions through my paid mentorship program. If interested, send me an email and I would be happy to send you the details: mycophilia.official@gmail.com
If you have to redry your mushrooms, obviously it is not an ideal situation but I'm sure you know that. I would do it if they don't smell like they're starting to rot. As long as the odour is not too pungent. Basically there's two concerns, the first is that you don't get sick from them. And the second is whether the flavonoids haven't degraded due to oxidization.
@@Mycophilia Gotcha. So in this specific scenario, they were dried for about 6 hours and then stored for a few days before being dried again for about 16 more hours, so I wouldn't expect too much flavinoid degradation, no? Thanks so much 👍
Thank you again for the video brother! I think this information is priceless for new growers. I bought a lot of books and read a lot of resources to get what you are sharing.
Freeze drying is actually not as good as dehydrating, at the time I made this video it was thought to be the other way round. The dehydrator will keep the flavonoids for longer, and the freeze dryer will keep more of the flavonoids but for a shorter period. I don’t have a freeze dryer so I can’t help you with the settings. Hope that helped somewhat :)
I have an airtight stainless steel container that is usually used for coffee beans. Should I store my mushrooms in there as is, or put them in a ziplock first then in the container? I see everyone just putting there mushrooms straight into the jar, no ziplock. I thought ziplock is extra protection from oxidation. I also wanted to go stainless steel to have it in complete darkness.
As long as it can fully seal, it will work. No need to put in a ziplock as a full seal is a full seal. Just make sure you put in desiccant in the jar, AND in the ziplock should you choose to use it for whatever reason.
I have been drying at 95F for 12 hours for the last year or so …. What the hell have i been doing 🤦♂️ … no wonder the mushies in my jars feel soggy even with the desiccant
would mixing tasty umami edible mushroom powder with melted chocolate to make choclate bars degrade the yummyness? ive read in some places you need to let it cool before mixing or it will make it less scrumptious. Thoughts?
@Mycophilia you said if it's cracker dry, it's not necessary. I commented before finishing the video. Hey, are your "grass lovers" nss? I'm growing south Africans, they're not pinning.
Very helpful thank you!! Question if I'm not able to dry them until a few days after harvest would they be fine in the refrigerator? They would be in there for 3 days max
I set mine out on racks for a few days to air dry and when they’re about half way dry I finish them off in my Convection oven at it’s lowest working setting of 170 degrees. When totally dry I store them in mason jars with a vacuum seal and put them in a closet in the center of my home🙂
@@samanyahuduga3198 - I would toss them out. The reason is that if there is mold on them, then there is definitely bacterial growth which is more dangerous to eat than most molds unless you’re dealing with Black molds. Most are white and blue bread molds and are harmless. Peace👍
@@samanyahuduga3198 - If you’re shrooms weren’t dry enough, it could possibly be mycelium going back to veg if it had enough humidity? Fungus are pretty tough and can survive a wide range of difficulties 👍
Hey mycophilia, quick question you mention edible mycology in the title and also a loss in taste. I had to ask because I’m new to this, but will these drying methods apply to medicinal mushrooms as well, or just all mushrooms in general. I’m not so much worried about taste as I am preserving specific compounds with medicinal benefits. Please let me know man thank you!
Not nearly as good as storing them dry and without air. It’s a novelty thing but for pure longevity, nothing beats dried. And dosing can be difficult with blue honey as proper honey doesn’t have much water to extract the goods, so what ends up happening is you’re eating powder with honey, and not an actual extract. Now when making blue honey with fresh fruits, it’s even worse as they eventually start rotting and may kill you with botulism. The best extraction method is tea, period. No alcohol or honey or whatever else, just pure water.
Not if it's new but I would recommend it if you've used it with contammed spawn before. Either way, I would give it a good cleaning with soap and water.
@@Mycophilia hi thanks for thr reply , one last question ,substrate , what is an ideal substrate in tropical regions ,, like thiland ? i still have to start making my own substrate, what I have seen on yt is coco peat vermiculite and gypsum mix ... is this fine or u have a better mix of some other
So I have started with grow in bags and have had lots of success I use an air fryer pro for dehydration just not sure on my times I’ve been harvesting blue buffalo and it seems times are always different but what is your suggestion about these types?
I’m not familiar with air fryers for dehydration so I cannot say. If you’re asking whether different varieties require different dehydration times, no it doesn’t really matter unless you have some huge fruits. Then you could cut them in half to dry them quicker, but for dehydrators as I say 24 hours in a dehydrator will just about always get the job done no matter the size.
I've used an air fryer to dehydrate fruits and it works fine, just make sure you turn the heat all the way down. I would recommend getting a dehydrator though, it is better than an air fryer.
I had one of those white, circular Oster food dehydrators and I totally zapped a whole batch of mushrooms to where they weren't active at all. Since then I've been (maybe too) paranoid about heat and only fan dry
Highly recommended to get them dry ASAP, it will lock the goodies in that way and ensure they are fully dry. It can be bad news to not use a dehydrator, especially when your RH is higher
I know this is very much a beginner question and I've tried looking it up but i can't seem to find an answer anywhere. Do you freeze dry the whole mushroom, stalk and all? And do you consume them whole?
What about low in a toaster oven? They have a fan in them usually. In fact, you can cook in one like I have, as you would in a normal oven or a toaster oven. As you can turn the fan on or off. And it circulates the air constantly when on. Just curious.
I have a Hamilton Beach dehydrator that looks just like yours, but with a max temp or 160. When I tested with my temp gun which is pretty accurate max temp I've achieved on the inside solid parts is only 145. Does yours do that too? Are the mushrooms going to be dehydrated enough?

I went to drive them at 155 until they were cracker dry. And I didn’t get any effects when I eat them. The second flush, I dried them in the air and that worked but now a week later they’re not working again. I guess my question is why is this happening? I’m taking the same dose or more with no effects and then sometimes it does work.
Genetics, multispore sometimes throws out a bunk flush
I’m glad some one made a video about this. Dehydrators aren’t ovens. Great video. I always do mine on a good dehydrator at 160 for 24.
Can I use the owen? I don't have dehydrator
QUESTION: What wattage should the dehydrator be, some are 350, 280, 500 and so forth?
@@jerseyjoe8637 doesn’t matter other than it has to be compatible with your power outlet, it’s all about temp and it having a fan.

Ok thank you.

Ngl now I wanna deep fry my biggest mushroom and give it a try 😂😂😂
I was supposed to dry at 140 F for 24 hours but accidentally left at 175 F for 6-7 hours and than switched back to 140 for the remaining time thereafter. I guess 10 degrees more than your recommended setting is fairly negligible. Thank you for posting this great information!
Cheers, yes 175f is nothing for them. They’ve been tested at 200c for 1 hour with minimal loss (that’s about 398f).
honestly I love the euphamism in this video, like we all know what is meant, but yeah we're chasing that Umami guys. I wanna grow a nice batch of shitake for my dashi of the gods XDXD

I’m a beginner and I’m worried that I’ll over do the drying process. So I was wondering if you have a method to tell when the mushrooms are REALLY cracker dry?
Did you find the answer to this?
Nope he just said do it for 24 hours
@@astranglylargehotdog9970 I know you posted this a year ago but for all reading this today. If you are a beginner, then ESPECIALLY listen to what I say in this video. I sometimes go 48 hours with this method and it’s completely fine. LISTEN. TO. THE. VIDEO. Don’t make the typical beginner mistake of thinking you know better 😅

My dehydrator I set at 140 for 16-18 hours. Then I vacuum pack them with a silica pack and they stay smelling fresh forever basically.
I already dried my mushrooms on cardboard. I just got my dehydrator in the mail. Should I still dry them in the dehydrator?
I just realized I didn’t get a dehydrator with a fan, so it’s no good to use?
Yes, you should use it
@@Mycophilia thanks for answering. Since they are mostly dry should I do a lower heat or maybe do it at 160 degrees for 6 hours?
The sad thing is, many times I thought I‘d dried my shrooms enough only to reach into the jar and feel they are spongy.
Do not re-heat or re-dry.
This reduces potency significantly to almost worthlessness, so better to overdry than underdry.
I’m still struggling with this aspect.
Once my dehydrator is done, I wait a couple hours to see if the shrooms stay cracker dry.
Many times they go spongy again.
you need to put dessicant into your jars and be sure they are well sealed.
Thanks for all these precious advices.
Thanks! Been searching for a while if using an oven would work Im gonna trust you friend
@@Murphy_. For how long???
For larger fruit, do you recommend cutting the caps off or splitting up the stem like some people do if dehydrating this way in the video? I am in no rush for them to dry quickly.

Don't cut anything if you can avoid it because it causes oxidation.
What do you think about using an oxygen absorber?

1st timer here. I appreciate all the info, for reals. You have helped me tremendously in my journey. I just harvest my mushrooms and put them in my dehydrator right away. I ended up putting a lot of the smaller pins at the top. After above 6-7 hrs at 160, a lot of the ones on the top turner pretty much black so i pulled them off. Did i over do it? Did i ruin them? 😢
Nope that’s fine, quite normal
Great vid! So if I have s huge harvest and it doesn't all fit in the dehydrator, can the 2nd or 3rd batch wait in standby in the fridge until the first batch is done?
Yes
Any benefit or detriment to slicing the mushrooms, or do you just pop them into the dehydrator whole?
Slicing will oxidize more flavonoids as you’re exposing more surface area to the open air. If space is an issue, I like to lay the fruit on my palm, and gently lay the cap down with my other palm. One part of the cap will disconnect from the stem, but some should still be connected so that you’re not completely separating them (cap and stem).
@@Mycophilia Thank you!
Thank you for the video! Will using the dehydrator @ 160 for 24 hrs Decarb it?
There’s no decarbing as they’re completely unrelated to cannabis. They’ll be fine.

What are your thoughts on drying mushrooms again, after they have already been dried once, albeit not for the recommended 24hrs?
If you have to redry your mushrooms, obviously it is not an ideal situation but I'm sure you know that. I would do it if they don't smell like they're starting to rot. As long as the odour is not too pungent. Basically there's two concerns, the first is that you don't get sick from them. And the second is whether the flavonoids haven't degraded due to oxidization.
@@Mycophilia Gotcha. So in this specific scenario, they were dried for about 6 hours and then stored for a few days before being dried again for about 16 more hours, so I wouldn't expect too much flavinoid degradation, no? Thanks so much 👍
@@mikeangelo8833 probably not. Best of luck!

Thank you again for the video brother! I think this information is priceless for new growers. I bought a lot of books and read a lot of resources to get what you are sharing.
Thank you Tony! And I appreciate you commenting!
How do you freeze dry mushrooms? I have a freeze drier but not sure about what settings to use.
Thanks!
Thank you very much! 💜

My Ninja air fryer has a dehydrator setting. Is it ok to use this?
Never used an air fryer but as long as it can get to 140-160f I don’t see why not
Can you rehydrate them after this or are they too brittle to do so?
Is this more for making powders?
For storage. You can't store them wet or they'll just turn back into mycelleum.
Unless you refrigerate them
If I do have a freeze dryer how should dry them in that?
Would a mason jar vacuum sealer enhance that even further?
For sure 👍
Do you recommend dehydrating at 165 degrees for 24 hours regardless of the size of the mushroom? Thx
Yes, it works for all. It’s the kind of overkill that doesn’t harm your fruits, but makes sure they’re good for a long long time.
@@Mycophilia I accidently left some in the dehydrator for 36 hrs. @ 165 instead of 24 hrs. Will that have much effect on potency? Love the vids! Thx!
Very helpful thank you!! Question if I'm not able to dry them until a few days after harvest would they be fine in the refrigerator? They would be in there for 3 days max
👍
Whats about drying, sealing in vacuum and store in the freezer? Shouldnt this be the best way for store? No air, no biological processes?
Vacuum sealing is best, freezer is not necessary nor ideal. Storing the sealed bags in a cool dry place is best.
Freezer is optimal for long term storage. I've stored mushrooms with no potency loss for 4 years and still going strong
If I only have an oven how do I go about drying??? Tia

I set mine out on racks for a few days to air dry and when they’re about half way dry I finish them off in my Convection oven at it’s lowest working setting of 170 degrees. When totally dry I store them in mason jars with a vacuum seal and put them in a closet in the center of my home🙂
I got dozen shrooms in plastic cover ... I kept it without seperating for drying purpose... Now mold has grown on them , pls suggest is it edible ???
@@samanyahuduga3198 - I would toss them out. The reason is that if there is mold on them, then there is definitely bacterial growth which is more dangerous to eat than most molds unless you’re dealing with Black molds. Most are white and blue bread molds and are harmless. Peace👍

I was wondering the same thing.
Taste=compounds in Mycophilia lingo!
Thank you so much my recent harvest went perfectly👍
What about blue honey?
I’d love a tutorial on blue honey and how to make and use it.
Do you need to sterilize the mason jars that you store the dried mushrooms in?
Not if it's new but I would recommend it if you've used it with contammed spawn before. Either way, I would give it a good cleaning with soap and water.

At what temp does the active ingredient start to degrade?
They are still very stable at 200c (not F) for 1 hour.
Was it a Multispore grow?
@@MycophiliaWhy? Can you explain how this effects it. I'm completely new to this.
Do I need a dehydrator? Or can I just let them chill somewhere clean till they dry?
Highly recommended to get them dry ASAP, it will lock the goodies in that way and ensure they are fully dry. It can be bad news to not use a dehydrator, especially when your RH is higher
I know this is very much a beginner question and I've tried looking it up but i can't seem to find an answer anywhere. Do you freeze dry the whole mushroom, stalk and all? And do you consume them whole?
Yes.
So heat doesn't kill the psylocybin?
Can you store chocolate in freezer
Freezer is the best, hopefully stored in something airtight

Absolutely not!
What about low in a toaster oven? They have a fan in them usually. In fact, you can cook in one like I have, as you would in a normal oven or a toaster oven. As you can turn the fan on or off. And it circulates the air constantly when on.
Just curious.
