we Georgians never eat khinkali with sauce. turist began do this, not Georgians. khinkali loseas taste and takes the taste only of sause. some Georgians ver rendom put very little vinegar into khinkali but I asure you even this idia is not good. you need nothing add to khinkali. best of all eat khinkali with vodka and beer. this is klasikal variant.)
I'm a Georgian myself. So the first thing I'd like to say is that tkemali isn't a sauce made of tomatoes it's actually made of wild plum. (Wild plum is also known as tkemali both the sauce and the fruit have the same name.) So yeah the next thing that I wanted to say is that khinkali doesn't really need any sauce you can sprinkle a bit of black pepper on it tho. Now for the last bit I wanted to recommend a few dishes: satsivi, kaurma-(scary "ყ" noises I know) Xashi goes well with liquor, Lobiani, (pastry a lot like xachapuri but with beans instead of cheese inside it) Gozinaki (more scary "ყ" noises... Gozinaki is basically honey with nuts very delicious btw) LOTS OF CHEESE. Fruit and citruses are also very tasty here, almost forgot to mention the west of georgia megrelians (also georgian) make great gomi, elargi-(pretty much gomi but with a bucket load of cheese) and mchadi. P.S tkemali goes well with pan fried potatoes.
Kharcho should be eaten with grits! just normal grits-in Georgian it is called -Ghomi. and--as everyone told you here-don't eat Tkemali with Khinkali. You are wasting both tastes here. :-)

I’m not Georgian but I’m pretty sure that tchemali is made out of prunes not tomatoes and most likely the red sauce you used called adjiki
