Well, some of them are there for the fine dining experience and not necessarily for a very filling meal. That said you wouldn't just be served this one dish, it'd be part of a multi-course meal.
thats not the fucking point. if youre hungry go to taco bell or something. here you eat for the experience. he shows you what can be done with food. the primary function of the food you get there isnt to satisfy your most basic of needs. its art
it is the kind of food you can hide things if you fucked it up. so much going on. i am sad about the chefs in that kitchen, all day running around for exact recipes that dont make anything taste better.

Ricotta is made from whey, not straight from milk itself. No question the cheese he makes tastes fine. But real Ricotta tastes so much more delicate.
