Potato Cheese Bagel | Potato Dough And Potato Filling!

    This potato bagel is mind blowing!
    The potato filling is so creamy almost like cream cheese. You don't really need cream cheese or jam for this bagel. It is soooo good by it self!
    If you have your own mashed potato recipe, you can use that!
    I recommend to make it the day you are going to eat! It is hard to reheat.
    * Ingredients ( For 4 Bagels )
    Filling
    - Potato 190g
    - Butter 10g
    - Parmesan Cheese 15g
    - Salt t.t
    - Pepper t.t
    Dough
    - Potato 60g
    - Water 100g
    - Yeast 3g
    - Sugar 10g
    - Oil 4g
    - Bread Flour 200g
    - Salt 3.5g
    Blanching Water
    - Water 1.5L
    - Sugar 50g
    * Method
    1. Peel, cut, and boil potatoes with a little bit of salt until fork tender.
    2. Mash the potatoes really well and set aside 60g to be used in the bagel dough.
    3. To the remaining potato add 10g of butter, 15g of parmesan cheese, then salt and pepper to taste. Give it a mix, add it to a piping bag, and set aside.
    4. Put all the dough ingredients in the mixing bowl and mix with dough hook until it comes together and form a tacky but workable ball.
    5. Rest the dough until double.
    6. Divide the dough into 4 equal pieces, shape into balls, and rest for 10 minutes.
    7. Flatten them with a rolling pin into a rough rectangle.
    8. Pipe some potato in the middle, fold the dough over and pinch it to seal. Then roll the seam over and pinch it again to seal.
    9. Gently roll the dough into a log, flatten one end and wrap the flattened part around the other end, and pinch the seams together.
    10. Place the bagel on parchment squares and rest until doubled.
    11. Boil the bagel in blanching water for 30 seconds each side then allow them to sit for 2-3 minutes to dry a bit.
    12. Bake at 350f or 180c for about 20 minutes.
    13. Put a slice of American cheese on top and enjoy!
