That is not how it is made. It is not made with yoghurt, celery, and carrots. Where did you get that from? I don't know where you got the recipe, but it is certainly not Moroccan. Get your facts straight, mate. Maybe try asking real Moroccans how it is made would be a good place to start. Aadess, as it is called, is far better and taster and not made like that.

As a Moroccan who loves Moroccan lentil stew I am appalled. Yoghurt? Lemon? Cinnamon? Celery?!

No, my dear, that has nothing to do with Moroccan cuisine. that is very far far away from Moroccan cuisine. First of all, in Moroccan cuisine, yogurt is never served on dishes, as this distorts the authentic Moroccan taste. Secondly, it's not a soup, so we never blend it, we eat it as a stew, with bread and fried sardines. I think you are confusing it with Turkish or Middle Eastern cuisine. Please change the title of your recipe, as a Moroccan I feel insulted.
As a middle eastern Arab this isn't even close to how we make lentil soup
My lentils can take 4 hrs of cooking and still be hard 😞
Use red lentils (peeled) and let them soak in water at least a couple of hours or over night. The older legumes are, the longer they should soak, add salt only when they become tender, otherwise they might never become soft.

Soaking lentils for at least a couple of hours, if not overnight, makes them cook faster.
In my country, we use pressure cookers to cook lentils, so they always cook very fast. But even without it, soaked and drained lentils cook well under 20 mins.

@@robm2707 Red lentils (peeled dried lentils) only take about 1/2-1 hour but whole unpeeled lentils should soak about 2 hours or over night the older they are. Lentils and other dried legumes get even drier with time. They do have a very long shelf life but the need more soaking. @StutiRajguru mentions pressure cooking which significantly reduces the cooking time.
