I definitely get where you are coming from with the long distance being tough. My boyfriend and I were dating for over two years when he moved five hours away. It's been really tough but it's absolutely worth it when you finally see each other again. And having Skype and calling helps so much more because you can actually see/hear their voice and face and it's so much easier to communicate. It's also beneficial that they're not there all the time because you can spend time with your friends and focus on yourself too. :)
I was in a long distance relationship for almost two years with my high school boyfriend and it was one of the hardest things of my life. I hate to say it but it never gets easier but it does become easier to manage. We've been together four years now and I swear to you that when its all said and done you guys will share something even more special when you are back together and it will feel even better than before, so hang in there girl I feel you :)

Lexie! I'm also doing long distance with my boyfriend of 4 years. We've only been dating long distance for a year though, after high school graduation (because of college). It was SO hard in the beginning. I didn't think I could do it all... my boyfriend actually wanted a break, but i told him no. he was either in this for good or not. It's now our second year in college and everything seems so much better. Sure, long distance still SUCKS, but it does get much easier. My boyfriend and I try to video chat daily and we make sure we have ways to communicate. I wish you and Finely the best, girl!
I'm a vegetarian, and one of my favorite meals/ snacks is definitley morning star farms veggie burgers with hummus and spinach. It is high in protein and under 200 calories per burger. Its also a great transitional food if you're moving from carnivore to vegetarian.
What I've recently started doing is looking at all of the vegan/plant based recipes on Pinterest and just changing little ingredients every time I make it for a little mix up :)

I am currently reading "The Engine 2 Diet" book and it is about plant based eating and comes with lots of recipes. It has good info and has some food myths. I would also recommend watching Forks Over Knives on Netflix which is positive for plant based eating and has research from doctors. I love oats with natural nut butter, cinammon, fruit, and nuts. I hope your vegan journey is going well.
My boyfriends and I have been doing semi- long distance for a year and a half (He comes home for christmas and easter and summer as he is at Uni) and its tough but you aren't alone :P
I love your makeup in this :) I definitely get you on the vegan-ish thing too! For the past two years I've been really careful with what I eat so I'll only have organic free range eggs from small, local farms and on rare occasion I'll have chicken but again, organic (still not ideal but my hope is that if it's organic they'd have to take better care of it) and free range. I also avoid trawler-caught fish and try to buy line/pole-caught but it's damn hard to find. Eventually I'll probably go vegan except for eggs because I don't see a problem there as long as the source is okay and it's easy protein but my diet is already mainly veg, fruit, nuts and lentils/beans. I've been at university since September and living alone definitely makes it easier because I can experiment knowing the food won't be wasted but the only problem is the price.

I feel so much better when fruits and vegetables are the base of my diet! I have so much more energy and life in me! My biggest struggle has been the social aspect. I don't know any vegans personally, so the majority of the time I'm at a party, a late night snack run with friends, eating out for dinner, or a family get-together, the food is meat and dairy based. Ex. Pizza, BBQs, Hamburgers & Hotdogs, etc. So I can definitely relate to your struggle. As for the boyfriend, I've talked so much about it, that it's begun to rub off on Finley (*goes to room and starts chanting*) and some days, he'll text me pictures of vegetables he's made! It makes me so happy. He still loves meat, but it's a start. Thank you for the kind words about us, it really means a whole lot to me, and also him (I just copy and pasted your comment to him in a text). We believe in each of us as individuals, but also as a union, but it's AMAZING to hear that we're not the only ones who believe in "us." Thanks girl

They also know that I can find something to eat anywhere I go, I think it's a skill you pick up as a vegan. Most of the time you can just google "vegan at (insert retaurant name here)" and someone else has already done the work for you. I can imagine being in a hispanic household and being vegan wouldn't be too hard, a lot of the food is centered around beans and rice mostly, right? Also, if it's something that you really want to do then you shouldn't let your boyfriends opinion of it affect your decision. Your boyfriend's opinion may be important, but going vegan has so many health and environmental benefits, not to mention that the animals will thank you! :)
amberholla_ Beans and rice are big in hispanic food, but a lot more central and south american countries eat more veggies. My mother & mother in law are both Puerto Rican and every meal has some type of meat - ham, steak, chicken, beef, pork. If it's not on the side, then they actually put it into the rice. I've been working on buying my own veggies, because both my bf and mother in law hate veggies, so I'm slowly working my way there. I agree, my bfs opinion is important, but I def know that my body specifically will totally benefit going vegan. My mother in law [who i live with] supports me, she's even accommodates her cooking now, I just hope that he eventually starts, at least, understanding my views. I was a vegetarian for 3 years, mainly because I don't believe in the way factories kill animals - its so inhumane, but i wasn't eating properly due to not having the right foods at home. So I'm trying to go about it the right way, and easing into it. I have faith in myself. Thank you for your comment, I'll def be doing more research!

Lexie please look up Dr McDougall, he promotes a high carb/starch based plant based diet and starting it was the best desicion I've ever made. There are some youtubers that are on it if you want to look up "starch solution".
