    Almost sold my fryer and the little detailed things you mention help me understand the difference and while watching I got it right for the first time.     Aunt Bessie’s frozen chips from Lidl. Comes with oil impregnated, out of packet into air fryer, no buggering about, 15 mins @ 180 C, delicious and with a piece of fish and mushy peas (if you are from the north).
    Having said the above, Great video if you want to do it the old fashioned way !!

    I put oil on my chips but not as much and I don’t remove the crisper plate or soak them in hot water so definitely trying this. I always par boil potatoes for roasting and I do cook them in oil without the crisper plate and they’re lovely, totally like potatoes roasted in the oven. ❤

    This reminds me of the time when we switched from 3 gas rings to an induction hob, the time we changed our car from gear stick to automatic, or when we moved over from PC to IPAD, everything is different at first but you gain the most benefit when you embrace the new. It’s the same with air fryers, all of them pretty much do the same thing in the same way, but the automatic pre set functions vary wildly in temperatures & timings, this is what catches most people out, by all means use them when convenient, but be prepared to experiment with manual adjustments, Leigh’s process is spot on I agree with the hot water, & oiling, however I found starting at a slightly lower temperature & raising it for the last 5 minutes works best for me. Like a lot of people I was initially sceptical about these machines, but after having one for several months now we use it every other day, it’s compact, lightweight, stores in a cupboard under the hob, my only regret is not allowing my husband to buy a two basket version as it was quite expensive, I now realise that you can put a small chicken in one basket, potatoes & veg in the other & set to have both finish at the same time, if you can afford it go for this option, these fryers also use dramatically less energy than your conventional oven under a hob.

      Thanks for the comment. A lot of good points. Like everything there is trial and error, everyone is different and in different conditions and ingredients. I wish I'd bought a bigger one too. Something to consider later in the year.

    Excellent video Leigh. Been making air fryer chips & thought they were ok but i tried your method and they were greatly improved using the boiling water for 5-10 minutes. .I think that you couldn't improve on that result at all. and your style & presentation is top notch .     I air fry frozen mccain skinny fries in a shallow puddle of oil, salt and pepper and they are the best fries around. Tenderize by shaking them and crisp them in the oil at the same time.

    I have a cosori with the press handle that removes the inner basket.So i took the 3 screws out to leave me with the handle.Pressed the handle into the outer basket so i had a solid bottom.Best chips ever THANKS 👍

    So the big question is, what variety of potato did you use for these chips? I have the Ninja Foodie Mini air fryer and over the past two years have tried several times to make chips from fresh potatoes. The results have been variable. All the chips were edible, many were great, but never did I achieve that certain something that marks out a truly excellent chip. I've experimented with timings and temperatures. I've poured boiling water over the chips and waited 5 minutes. The only thing I haven't tried is switching to a potato variety not tried before. For example, I've not tried red potatoes, nor King Edwards. Russet potatoes are often said to be the best for chips, but I've not seen Russets in any supermarket. Supermarkets seem to sell the ubiquitous Maris Piper potatoes or Maris Peer, or they sell "white potatoes" without declaring the variety. I have got very good results from Cornish new potatoes. An absolute chip cooking zenith would be freshly fried chips in a Belgian roadside chippy.

    First thing I thought was how can you compare McDonalds (fries) with air fryer (chips). Then I thought McDonalds (fries) are actually quite tasty when they are hot. Air fryer chips are surly going to be better cooked, tastier, and more filling. Thanks for the video.

    What would the result be if you let the cut potatoes sit in the hot water for 20-30 minutes?

      Probably get a little softer. I often let them sit a little longer because I get side tracked.But the water cools fairly fast so its not like they will end up cooking through.

    Just been watching Dave Myers chip video, he does them the same but soaks them in cold water and salt, he says the salt draws more starch out. I have a twin drawer fryer, I'll try your and his and see what happens.. Cheers.
    UPDATE: I've just done both versions but used Extra Virgin Olive Oil. Funny thing was Dave Myers cooked first by about 3 minutes, left your version until they looked the same, both tasted exactly the same, next door neighbour said the same thing, bang on mate.

    I’ve only soaked the chips in cold water for 30 minutes prior to cooking, I am going to give your method a try and see if it makes a difference - I would imagine it does because of the part cooking especially if left for the upper recommended time of 10mins 😊

    Great video, great method, nice and crispy. Sadly, as with all chips done in any oven, the chips are still "dry" rather than moist like they could out of a traditional fryer. Oh well, best I've come across so far :)

    Just fry your chips if you're fully covering your potato in oil. The best airfryer is the Tefal Actifry because it constantly rotates without all the faffing. Add oven cook chips, et voila! Perfect crispy chips.

    I finally worked it out, who would have thought a potato could cause so much trouble. This method worked for me, even though I attempted it a while back but I missed a step which made the difference.
    Step 1. Use Maris Piper potato's (UK)
    Step 2. Don't cut the chips so they are too thick.
    Step 3. Rinse them well with cold water.
    Step 4. Put the chips in a big enough bowl and cover the chips with water, add teaspoon of salt and then leave the chips to soak in water for 30 mins, minimum. This is so important, it releases the starch out of the potato, but do not use hot water, must be cold water from the tap is fine.
    Step 5. After leaving 30 mins, if you have time leave them 45 mins, but 30 mins is fine, it's really important that you pour the water away out of the bowl and then put the chips in a sieve and wash with cold, (tap water) again.
    Step 6. Now you really need to get the chips as dry as you can, don't use kitchen roll yet because you will use loads of it, instead put the chips onto a clean tea towel ideally a thick towel which needs to soak the water from the chips, keep patting and then after a good shake and pat, grab a handful and pat them down with kitchen roll.
    Step 7. With the chips as dry as you get them, put all the chips into a dry bowl, then add 1 tablespoon of olive oil and then either with a spoon or hands mix the oil with the chips to give it an even coating. Some people add more salt it isn't necessary. But if you wanted to add spices then again mix it well into the bowl of chips.
    Step 8. Most air fryers have a warm up setting, mine doesn't but just set the air fryer to 200c and set the timer for 30mins. Let's the air fryer heat up, shouldn't take long.
    Step 9. Once the air fryer has heated up place the chips into the trays, try not to stack the chips to high, but as long as air gets around them plus you will shake them during cooking. Reset the timer for 30 mins.
    Step 10. After less than half way the air fryer will bleep for you to shake the chips, shake them well and spread them evenly, do not add any oil or salt.
    Step 11. The air fryer will bleep again usually 5 mins to go to shake them. Now depending how many there are plus how well they are cooking, if they are looking a nice golden brown or even rustic looking then after 5 more mins they should be done. If however they still look white/yellow and taste raw, extend the time by 10 mins.
    Step 12. After they are ready give them a final shake and put them in a bowl with some kitchen roll in the bottom to soak up any oil.
    Step 13. Serve and eat away.
    Lastly timings can be adjusted depending on size of your air fryer, how much chips you cut and the size of the chip. But the most important steps are to soak the potato for 30 mins or more and to dry them as best as you can, also Maris Piper work better

    Also if you like Mayonaise, simply coat the fries with a tablespoon of mayo, salt & Pepper and then Air Fry, they are delicious.

    Followed this recipe using my Ninja Foodi Max Dual Zone for the first time. Had to abort at 15 minutes. They were already burning at 12 minutes when I went to toss them.

    What's the difference between red and brown potatoes and does the chips taste any different?

    I think its very important to use the right kind of potato .I don't know of "Rooster" potatoes.
