Yes, but have the 4-6 person electric boat powered by a detachable jetski that is surrounded on 3 sides by the boat in front. Then you can leave the party anchored in the middle of the lake, run to get ice or supplies at the marina, and come back to the anchored boat. Or simply do a few fun loops on the jetski with 1-2 people at a time.

While I still love the idea 180 Miles out of 250kWh is really poor efficiency. The new Mercedes sprinter electric has half of the battery size and should be about 250 miles.. I love that they tapped in with the solar system and the lightweight ness of the solar panels and yes, the sprinter is kind of smal, but id love to see a solarrolla build of that. Btw. My best idea for the solar panels would be a folding awning, the 3 panels should glued flexible (maybe with a seatbelt stripe) and a string retention system to fold and unfold them from under the top panels.
Double stack the panels on the roof.. top row on slides that you can just pull out when parked for a solar awning, leaving the bottom panels getting sun simultaneously.. and when you’re done, just slide it back on top and lock it. And you still get juice on the top panels

180 miles is roughly 29 mil. On 250KWh, that is pretty piss poor performance. Just shows that the heavier it gets, the less sense it makes to go electric. Also since there won't be batteries for everyone it makes sense to make smaller batteries. Where electric shines are electric scooters I'd say. Mine does roughly 55 miles a summer day with a 1.6KWh battery. That's 48 times more efficient, which means that that thing equals 48 people driving scooters the same lenght. Now the biggest thing that I believe could still be efficient would be something closer to a APE 50 class running navmotors.
