You should try ham and beans over cornbread. Cook your ham hock with white beans. I use chicken broth over the beans. You can even add greens. Serve it over a piece of cornbread with butter. I chop up onion to put on top. If you use green onions use the green and white parts. It’s a favorite of mine. I was raised on a large farm it was considered comfort food. We hardly ever went to a grocery store because they were so far away!

I love the meal prep videos. I "prep" but differently than you do. Since I just cook for two now I buy things about twice a month and brown all the ground meat (some with onions and peppers and some without) drain, bag and freeze. I buy a big bag of celery at Costco and chop the whole thing up (some tiny, some chunky) and freeze in bags. Freeze bags of chopped celery, onion, and carrots for soup starter. I make a big pot of tomato sauce and freeze in portions. Make almost 100 meatballs and brown and freeze them. Buy rotisserie chickens, taking the meat off and dividing it into white, dark, legs, etc. Then make chicken stock and freeze that in measured amounts (usually 4 cups). I buy huge bags of onions, keep a third, slice a third and chop a third. Then freeze all the cut stuff on trays and transfer to bags. Same with peppers, slice half, chop half and freeze on trays and transfer to bags. THEN when it's meal time you just throw the prepped ingredients in a pot or slow cooker, season as desired and you're done!
