Love all your videos - very informative to the finest detail which makes it easy to follow. As a child my family lived in Cyprus and we had a massive wood fired oven built by my father.I have a fond memory of my mother lighting it up every Saturday morning and all the surrounding neighbours would come with their dough to use the oven & have their bread baked for the week.They would all sit in a circle & drink tea or coffee & chat while the bread was being baked, lots of stories & laughter. I now live in Australia & you have inspired me to have a wood fired oven built at my home so hopefully my kids can enjoy the same food & experience as I did.Big Thank you.

After watching your great videos dozens of times I finally decided (and convinced my wife) to buy an outdoor oven myself. Since we only have a small garden a big brick oven wasn't really possible. So I ordered the Morsø Forno cast iron oven with ceramic tile floor. Really excited trying some of your recepties!

You may not read this two years on, but I had a similar journey that lead me to buying a Morso Forno as well...and a year or so later, the Gozney Dome. We're moving to an old, restored farmhouse on a few acres of land and only one of them can come along...the Morso Forno. It's nowhere near as efficient as the Dome which is a cooking powerhouse, but it has more space, it has styles for miles, and it's just a lot more fun to gather around. That said, I have my ultimate sights on a larger wood oven like Clive's here, but the Morso Forno will always have a home. That and the Black Earth Grills Teppan plancha made by a Hutterite community here in North America.
As someone who has delved into the world of the Neapolitan pizza and a love for woodfire ovens this video blows me away. I love the production it's like taking the viewer on a Mediterranean journey of food and history. Keep it up.

I also build a clay oven did few basic mistakes my biggest mistake trying to save space on top for more wood storage even it was plenty underneath the oven I didn't build the oven high enough for the size of the door so some heat was escaping as i was heating the oven up second mistake the outer rendered skin cracked up didn't repair it rain got in n one day it collapsed i've used about 20% sharp sand to mix with the clay lots of hay from a farm not far n two bags of vermiculite to keep the heat in the over all in all it was over 6 inches thick door was gut from a 32 mm floor tile so was the door "frame" the flue was in the front but as i closed the door the door was behind the flue so no heat loss there then sealed the door with clay to keep the heat in ONE minute it burned my mate's Pizza but lamp cooked n there for 2 to 3 hours was he taste of heaven with lots of Origani Thyme always used some bay branches they burned almost instantly to give the food a more authentic wood fired taste oven would stay warm till next day after cooking with the door on

@@TheWoodFiredOvenChef thanks, am not sure if i be able to build another clay oven now day at my age But i build one n used it sometimes quite often learning by talking to others, but mine i believe was quite good in energy efficiency i did Not use ANY bricks at all, was on a nice high level with storage for wood under n a frame round it with a poly carbonate roof to keep the rain out did a lot of modifications to it n few mistakes on the way, after the clay died as it was only about 3 inch thick i got a bag of vermiculite for heat insulation n stuck it all over the over n unibond then more clay with straws till i had about 5inches n 6 inches on the roof a skin of rendering kept the elements away but when the rendering cracked n i didn't repair it water got into the clay n it collapsed the door was from an inch n a half garden tile i used to seal round the edges with clay after cooking was over it would keep warm wit the door in position till next day so used to put the next wood in to dry ready for the next time

I built a wood burning oven years ago and we love it. I have a medium sized Earth Stone Oven and it can be used for cooking anything. I've even used mine to smoke brisket. The host is so right about this method of cooking, it brings one closer to the food that is being prepared. Building, watching and attending to the fire is always a learning process and the finished dishes are always more complex.

Great video loved every minute of it.I Grew up around wood ovens begin Greek watching my grandfather and my father over the years lighting up the wood oven. My father build mine out of stone looks great i really appreciate it i love cooking in it ,its a family thing bring us together the Greek style wood oven is a little bit different but works the same we haven't got a chimney. Sometimes i throw few sticks in it and fire it up not to cook but just to sit in the dark only the fire as light with a cold beer and relax just admiring the oven.

I have been watching this video this last few months, it's not the first timer for me, I found them some time ago when I was contemplating making my own wood fired oven. No I find myself court in Africa not able to get home, a short trip that has turned into months, because of the Corona virus, ones again the strike home and really gives me some peace, thanks, hope you carry on.
For a very long time I have been learning about wood fired ovens. Your videos are so inspiring that moved me from it would be nice to have on to I got to have one. I now have a premio 100 just like yours. We are still building it but it’s functional already. We love it. Thank you for the work you put into them. You are very clear to explain and have great ideas for what to prepare in the oven, which I identify as I like to prepare different food on fire. I live in the central part of Cnada so , 5 months of the year we have snow in the ground and very cold; but I have no choice than building the oven outside. Built mine about eight years ago, only use mesquite wood, living in AZ finding fruit woods in harder than east coast. Start my fire early in the day and cook later afternoon, oven keeps heat for days after. Made bread without fire for a test three days later just to see if I could and it worked, it took a while and strangely bread browned throughout, but was very good.

Very nice video. I really appreciate the comment about the best temperatures to cook, and it really inspires to build one. I loved that he wouldn’t dismiss the modern portable ovens. On a technical note, an oven stores energy (enthalpy if you will) rather than heat. Heat is energy being transferred, so storing heat is a nonsense, (because heating and storing are opposites).

I built a wood burning oven years ago and we love it. I have a medium sized Earth Stone Oven and it can be used for cooking anything. I've even used mine to smoke brisket. The host is so right about this method of cooking, it brings one closer to the food that is being prepared. Building, watching and attending to the fire is always a learning process and the finished dishes are always more complex.

Great video loved every minute of it.I Grew up around wood ovens begin Greek watching my grandfather and my father over the years lighting up the wood oven. My father build mine out of stone looks great i really appreciate it i love cooking in it ,its a family thing bring us together the Greek style wood oven is a little bit different but works the same we haven't got a chimney. Sometimes i throw few sticks in it and fire it up not to cook but just to sit in the dark only the fire as light with a cold beer and relax just admiring the oven.

Hello, I found your channel while I was doing some research to build my oven. The style of your videos are unique and are loaded with very usefu information. You are very clear to explain and have great ideas for what to prepare in the oven, which I identify as I like to prepare different food on fire. I live in the central part of Cnada so , 5 months of the year we have snow in the ground and very cold; but I have no choice than building the oven outside.

Built mine about eight years ago, only use mesquite wood, living in AZ finding fruit woods in harder than east coast. Start my fire early in the day and cook later afternoon, oven keeps heat for days after. Made bread without fire for a test three days later just to see if I could and it worked, it took a while and strangely bread browned throughout, but was very good.
Always great to find a use for the retained heat.

Very nice video. I really appreciate the comment about the best temperatures to cook, and it really inspires to build one. I loved that he wouldn’t dismiss the modern portable ovens.
On a technical note, an oven stores energy (enthalpy if you will) rather than heat. Heat is energy being transferred, so storing heat is a nonsense, (because heating and storing are opposites).

Years ago, i was getting my lunch at a brand new bakery/deli, one day the owner or chef came out from the back and said to me “come back here” so I followed him back and showed me an oven- similar to this, i can remember it being deeper. Thank you for posting and sharing!!!!!!!!!
