Made this yesterday. No mixed spice I made my own with cloves nutmeg ginger and cinnamon. No sultanas, I subbed in cranberries left over from your Christmas wreath! No candied peel, added zest of half lemon and half orange. Simply delicious and HUGE. Thank you!
How delightful! What a treat it has been to watch you teach this recipe Jack. Lovely clear instructions and sound explanations whilst making it all look effortless. And full marks for including citrus peel. What is it with people today avoiding it? Christmas cake and pudding and hot cross buns are nothing without it. I have only ever made hot cross buns once in my 65 years on the planet and I was heartily disappointed ..... not with the finished product but because I missed out on one! I decided to make a second batch to give a friend but while I was doing that my husband and sons polished off the finished first batch 😠 It seemed like such a long process for no return that I have since been known to do a 120km round trip across Melbourne (Australia) to purchase some from two bakeries who make top buns - at a top price. Now I have the house to myself for longer periods of time I'm going to make your buns and enjoy at least one 👍 Best wishes for a long, happy and successful life, Yvette

Thanks Jack. I just pre-ordered your book. Love that you have a Canadian (shipping included) option! I am not a fan of Hot Cross Buns but will definitely give this a try. My Mom loves them. Here is a typical blend of spices used to make the mixed spice: 1 Tbsp ground allspice 1 Tbsp ground cinnamon 1 Tbsp ground nutmeg 2 tsp ground mace 1 tsp ground cloves 1 tsp ground coriander 1 tsp ground Ginger Blend all spices together, and store in a sealed jar away from light.
A tip for the grease proof paper is to crunch it up into a ball and then open it out and it will fit better into your dish or tray. Also instead of mixed spice, I use garam masala as it’s much cheaper and has similar spices in it
So thorough. Definitely made me want to give these a try! I think being able to teach your classes again has brought you back to a more zen place! (Of course, I base this only on seeing you in videos 😏)

Much easier than I expected, I had watched the video last week so I carefully followed the recipe in the book. I'll definitely make them again. 👏👏

Baked these today. Been baking with Jack for a year or two now so I have learnt how to handle a wet dough. These are brilliant. If you bake you may as well bake big, which these are.
Hi Jack, made those today for very first time ever. They came out absolutely gorgeous! Best tip... how to distribite the fruit... this worked soo well, never seen fruit incorporated in pastry so beautifully before.

Hi Jack I made these buns everything went perfectly well, the dough rose beautifully. But after shaping the buns they collapsed during proving , I proved them in my 40 c degree oven . This always works with bread making , but could this be the cause of them collapsing or could it be That i didn’t roll them lightly enough. It was very disappointing I tried baking them which needless to say was a disaster and they ended up in the bin. could I have kneeded the dough again and saved it like you do with bread dough ? Thanks again for your amazing teaching .By the way I received your book today .
Yes Ruth, the puffed up to much in your oven and couldn't take any more rise! THat's why they collapsed. Prove for less time or at a cooler temperature so they don't go that far next time. :-)

I have ordered your book and expect it sometime at the end of May to Michigan, USA. I will try this recipe after the holidays. But the challenge for me will be weighing everything, I am a cup measurer. So between measuring and measuring in grams vs oz. It will be a learning experience!! We have something similar in Venezuela, ambrosia. But it doesn't have spices, but orange blossom water. This look tasty, if I find candied peels at the supermarket I might try to make them.

Finally going to give this British classic a go Jack. Here in 'merica, our two must popular flour choices are an AP at 11.7% or SWBF at 12.7% protein. Would the latter be too much gluten and lead to heavy buns or do we need that strength, given the nature of the inclusions?

I had half-forgotten the book comes out soon. Ordered it ages ago and hopefully, it will be here in time for my birthday in May. These buns look amazing. Easter is over now but I can always do them without the cross. Buns are delicious no matter the time of year. Also, I'm wondering if I could soak the raisins in something else instead of water. Orange juice and some booze, perhaps? Would that mess with the dough?
Thanks from Australia Jack!! Excellent recipe. Just made a test batch. I did use a stand mixer to knead though, expect for adding the fruit. I followed the recipe for that. I'm tempted to throw the fruit into the stand mixer as well. Would that stuff it up? Maybe squash the fruit?

My granma was not a gentle woman and she took the task of teaching me how to kneed and make bread. She kinda traumatized me, and i hated bread since then. I'm trying to overcome the trauma and relearn the correct way to make bread and in a way i can love it instead of dreading it.
Awesome! That was a lot of talking about my buns! I was exercising them while watching it! Haha! This sounds like an awesome recipe, but I will try to make it with sourdough. Sir Bobby Farts-Alot needs more exercise. I also googled the spice and found a link for Schwartz Ground Mixed spice, that contains "an aromatic blend of cinnamon, coriander, caraway, nutmeg, ginger and cloves". I could have sworn you said "dill" in your video but I may be off my buns in this. :) That's why I googled it. I usually make those spices in the coffee grinder turned spice mill. Works like a charm. I make my "Brotgewuerz" for my sourdough bread the same way. I have a bit of the baking spice from Kalustyan's left that contains Saigon & Indonesian cinnamon, nutmeg, mace, allspice, ginger, Cloves, Dried orange peel & cardamom, which is very tasty as well. Oh, and the white cross will be mixed with come Cointreau in the water. :) I may even soak the raisins in that. Thanks for getting my baking brain going. I needed that this morning.

Wow those looked delicious!! I never heard of that mixed spice. I’m going to look for it and give that recipe a try. I never liked the hot cross buns in the store. They taste like fruit filled cinnamon buns.
You’d usually add a little extra liquid because wholemeal flour soaks up more liquid. Also, I’d use a 50:50 white wholemeal mix. 100% wholewheat would probably by far too dense.

Looks great, thank you, what do you think of soaking the fruits in Brandy or spiced rum? Have you tried putting some titanium dioxide in the cross?
Wow those looked delicious!! I never heard of that mixed spice. I’m going to look for it and give that recipe a try. I never liked the hot cross buns in the store. They taste like fruit filled cinnamon buns.

Hey Jack - how about a wholewheat option. Any other changes apart from the flour?
You’d usually add a little extra liquid because wholemeal flour soaks up more liquid. Also, I’d use a 50:50 white wholemeal mix. 100% wholewheat would probably by far too dense.
