    Roasting them on top of stove in cast iron griddle roasts them faster. Love your videos!

    Oh man..... roasted chillies is one of the BEST smells ever! I'm originally from SW Colorado, so that smell is everywhere during the fall. That's how we knew cooler weather was on its way. My best friend teases me. She says I look like a drug addict when we pass by a roasted pepper stand because of the way I act. Lol!

    Loved this as I'm roasting Habanaros because Anaheims are not available in nj. From New Mexico originally I really miss picking and roasting enough to last a year. It was turned into a party with whole roasted goat and vegetables. Thank you, love and peace. Blessings

      I’m from Albuquerque. I so miss my green Chile! Growing some in SE Texas. Good but not Hatch flavor. I’ve roasted a few. Plants are loaded, May dehydrated them for powder.
      Nothing is better than fresh Hatch Chile and NM food.
      Going to a family reunion in July.
      Driving, just so we can go through Abq. Can’t wait. Bringing home Chile if I can find it!
      I don’t miss NM, some people, but the food… it’s the best!

But honestly, I appreciate YOU more. Also.....I got a good chuckle over those expressions after the 'sweaty face' comments. Adorable.

    I can smell those from here! Delicious, nothing better than fresh canned chilies! Loved New Mexico and the yearly Hatch chili roasting!

    You can also lay a damp cloth over the chili pile after the cooking process.
    If you want a restaurant style salsa try chili de arbol. It’s a dried red chili often seen at the grocery store.

    Im a bit of an "urban homesteader" as it were, where often come across rather large amounts of various fresh-ish vegetables free of cost ;)
    Yesterday, i got about 8 pounds of Anaheim chilies, so of course i had to get an idea of what to do with them. Voila, LTH has the answer! Thanks Sarah, gonna roast these peppers, and get a facial while doing it! Lord knows my weathered face can use some help!

    We used a chicken wire tube and weed burner to roast peppers. Then put in small cooler till we dressed them out. The smell when roasting peppers is a cherished memory from my growing up in West Texas.

    When i lived in NM - we would buy bushel sacks of Hatch chili's and they would roast them in the parking lot for free. Then we would just take them home and put them straight into freezer bags, skins and all. Then for a meal, just run hot water over bag, the skins come right off and the seeds go down the sink as you wash them. Oh the smell of fresh chili's!

    Oh I can't wait to do this! Unfortunately, the seeds I had for special peppers like Anaheim and poblano were old seed given to me years ago (2012), but I decided plant anyhow as they were free. No plants. But I do have jalapeno and cayenne, as well as an assortment of bells that I will try this with!

    My darling bride wants me to make her a chile roaster, just a small one. I’m planning on using a weed burner for the heat source. It’s just a small rotating mesh tub, similar to a bingo tub used to spin ping pong balls, but made of expanded steel mesh. I stand down wind of roasters and breathe deeply! Roasting outdoors saves the house ac. Blessings!

    You two are really refining your presentation! From dropping "this is..." in favor of "I'm..." right on through to shooting, editing, etc. I'll probably have to get some tips when/if I ever decide on what I'm gonna do here. I guess I'll have to try this pepper thing sometime now, though I can usually fumble the easy out of almost anything. Keep going!

    You can put roasted peppers in a plastic bag and roll in a cloth towel to steam. Than you use a paper towel and rub off the peel. That’s how I do it. Try it .

    You don’t need oil to roast your chilies. Just throw them in as is, also the char has flavor you don’t have to peel them

    While poblano peppers are traditional. Anaheim chiles make delicious chiles rellenos. Try it!

    Yes, and you can do the same with the Bell peppers (for pizzas, sandwiches, etc).

    Screw the store! Food comes from our Mother Earth! Even a 200sqft garden can produce enough fresh veggies for a 3-4 person household. The French Intensive method works great for a small family garden ❤

    I have a question, why did you not just mound the peppers on the cookie sheet in invert the bowl over peppers to steam?

    Faithful Traditionalist here :-) Can you tell me how long the fresh peppers will keep or if I can freeze them and then roast them when I have enough? I don't have as many plants as you so I'm only getting a few ready for harvest at a time, but I'd love to roast and can them.

      The nroated peppers will stay fresh in your fridge crisper for a week or more. It wouldn't be hard to roast them in small batches, freeze them, and then can them all together later.
