    I grew a Whole Bunch of Hatch chili peppers this year, and we have been roasting and enjoying them with our meals, but I have So many coming in from the garden that I'm going to have to can some. There are not a lot of videos on TH-cam about canning roasted peppers. Thank you for making one!

    I doubt you’ll see this but I am really glad you do these teaching videos. Thank you. Also, your daughter must be all grown now and her sister too. Time really flies when you’re busy canning and gardening. Btw, I like to review videos before I start a canning project even if I’ve done it before just to remind myself. Thanks again.     I have been watching you guys for a few years and can’t believe this is the first time I have seen the girls.
    I am growing anaheims this year for the first time. I didn’t realize that their skin was tough until I chopped some raw and sauteed them in a dish recently. The tough skins weren’t very pleasant to eat. My plants are loaded down so I searched for how to preserve them and found this video that I missed when it was new.

    I did the same canning with those peppers about 3 years ago. They we just finally used the last jar about 6 months ago so they last long. I used the tiny jars as well and it was a perfect size for our family for a dinner. It is a very good skill to know how to do.

    Holy crap! I needed to have kids. LOTS of them! Because roasting, peeling, chopping and canning these chilies is a HUGE project! Thanks for the canning tips. First batch is about to come out of that canner. YUM! I probably have never posted a comment on your videos but I should have. Thank you for all of the great info. Wish we were neighbors!

    Yesterday I picked 75 green Anaheim chili peppers from 12 plants. I have more on the plants that I’m going to allow to get bigger and turn red. Those I will dry, but I was so happy to see that you were demonstrating this today, because I wanted to roast mine and can them. I’m hoping it’s sugar free because Hubby is a diabetic.

    Oh man, every time you work with Anaheim peppers I am so hungry for Chile Rellenos. It's a pepper I will try to grow in our garden this year. Will char them and freeze for making Chile Rellenos over the winter. It's a meal you can probably make with only ingredients you have on the homestead. And soooo good.

    I live in central Missouri and have lived here for 12 years. I have been growing Anaheim peppers for more than 20 years in San Diego, Utah and in Central Missouri. I now grow a different variety that I think is superior to Anaheims and that is Guajillo peppers. My main complaint about Anaheim peppers is they are very thin walled peppers. I think the Guajillos are as productive or nearly as productive as Anaheims but they have much thicker flesh and are a little bit hotter (not too much). A lady was selling plants at the Columbia, MO farmers market a few years back and I have been saving seeds. Guajillo peppers have a similar shape to Anaheims and are often sold as dried peppers in the Mexican section of Supermarkets. Overall I have had tremendous luck growing peppers in Missouri. In my opinion I think it is easier to grow hot peppers than sweet(bell) peppers here. I have noticed that Bell peppers have a hard time setting fruit when summer is in full swing and starts setting again when it starts to cool in the later summer. In my opinion just about all of the numerous hot varieties I have tried have no problem setting fruit even in the really hot, humid weather of July and August.

    Congratulations Grace! I gotta tell ya.....I LOVE that name. It was my grandmother's name. It's my daughter's middle name and is also my granddaughter's middle name. So in our family we are blessed by Grace , and, since I love these videos so much, we count you as one of this blessings! Sarah, did you ever try to make pepper jelly? It is very tasty along with some cream cheese and crackers. Makes a great snack or tray of hors duerves (sp) when you have visitors over.

    Hello!! I finally had a great harvest with my chilies here in NW MS. First time canning them up. Grateful to find this from y'all. Been in south for over 30 years but my western roots love my chilies. Prices are to high to buy Hatches anymore had to grow my own.❤ Blessings to y'all

    Hello from Sunshine Hill in Northeast Kansas! Congratulations Grace, it's quite a milestone for a teen! Be safe! I love your channel. We just moved to our little slice of country heaven last October. I can alot and starting over with a new garden has been interesting. I really do miss my New Zealand rabbits and the fertilizer they make. My last garden was great because of them. I will be getting some next spring. I also want to get some Lavender Orfingtons. I commend you in living your country dream and watching your channel has really got me to thinking how we can be even more self sufficient and retire sooner than later and live off our two acres. Please keep posting videos and teaching great lessons.

    Protect your jars and counter, easy and available, cut cardboard boxes into sizes appropriate for your counter. If I am doing anything that takes a long time to cool down, like meat, I use a double layer of cardboard. Works great and if you have a dry skinny space to tuck the cardboard into you can reuse them multiple times. I throw them out when they get greasy or sticky but generally they last a long time.

    Never in my life did I think I would find all of this so interesting. I think a lot has to do with liking you as people as I came to your channel recommended by another homesteader whom I didn't care for and was just going to pass on by but thought why not....and am so glad I did.     Hello Sarah and Grace! Great job young lady😊 just pickled a couple of jars of pickled hot peppers. I also used the Ball book. I made some of the Habanero Gold from the recipe in that book, and it was a hit. Sweet heat. On grilled pork chops as a glaze or with cream cheese on crackers. I’m enjoying each and every video.     Sarah, you’re such a great source of info for canning. It’s not something my family ever did. I helped a friend once make/can jams & jellies over 20 yrs ago & that’s the extent of my experience. Goal is to grow as much of our produce as possible, as close to year round as the weather in zone 9b will allow. So, I need to learn how to preserve our food moving forward since I plan to greatly increase the yields in each season. You’re so helpful for someone who knows nothing about canning. Thanks for referring to the books that I need as well. Tell Grace best wishes for the new school year & congrats on getting one step closer to being a licensed driver!     i have a canner just like that one. I bought a different weight to go over were the steam vent is. it is a weighted gauge that goes from 5-15 pds its much better because you don't have to rely on that gauge. I also have that huge all American canner that will hold 16 quarts. and the smaller one that holds the same amount as your presto. great videos BTW.

    We are getting ready to can our peppers and wanted to watch you before starting. This is our first time canning peppers. We have the same pressure canner as you do. What we don't understand is why you let the pressure canner steam for 10 minutes prior to putting the regulator on. Did we miss something .....?? Thank you for your information. We love watching you.... you have been so helpful.

    I canned hatch green chilies this summer. It was a lot of work and only got 3 4oz jars as I had to buy my peppers and they were only available a week or two. I make Mexican lasagna and need them for the recipe. You are a super woman.

    How about taking the chili peppers and making some vinegar sauce to put on greens? You can use old bottles and let the vinegar sauce sit over winter. Anyone who eats greens uses pepper sauce. This would be a great addition product to your farm sale items at the market. Plus, the older the sauce the better.

    Great job 👍 definitely need those gloves when processing peppers 🌶 I remember as a kid a couple times we had forgotten to get gloves and our hands we’re burning for 3 days after. We used to soak our hands in milk to pull some of the heat out. 😜then we started keeping gloves on hand all the time for processing peppers 🌶 and it made such a huge difference.

    Sara there's a easy way to peel de-vine the Anaheim Chile's so we rub any kind of oil on them you prefere toast them on open fire or oven once there nice a toasty put them in a bag and wrap in dish towel let them sweat for 30 min. To 1 hr. Then you get kitchen shears cut the butts off and you can pull everything out run under a little water and peeling comes right off so fast or you can even fill a big bowl of water and do it which ever you prefer they make good chili rellanos or chop up add to onions tomatoes and potatoes for dinner or breakfast Mmmm enjoy.     Sweating the peppers in a plastic bag right after roasting is what they do at the chile stands here in Colorado. It makes them easier to peel.

    You can divide your jelly jars and use half and put the rest in the freezer.

    You can take the skins of peppers off after roasting them by roasting and popping them int a bag plastic or paper to allow them to sweat then just peel them off with paper towel or wash cloth.

I am waiting for a Miro pressure canner to come from the USA, then I can start canning my vegetables. As this is my first year I am learning a lot. Being in the UK all my tomatoes and sweet peppers are in plastic and glass greenhouses as it is too cold outside. I have harvest my first bell pepper who started to colour yellow. I had a mixed seed sweet peppers so i also have purple and whitish peppers. About 50 plants. I got carried away sowing LOL. I canned my first batch courgette pickles from Ball’s book and wild blaeberries (blueberries) with the starter kit. As I am on my own I use 4 and 8 oz jars. The recipes are mainly for bigger jars, would I use the same time or a shorter time.

    Looks like a grab canning setup! I have small super chili peppers (1”-2.5”) that I roast and put in my fresh salsa without peeling the skin. I wonder if I can leave it on when canning also. Do you remove the skins for taste, or is there a bacteria concern if the roasted skin is canned? Thank you!
