Rachel Sandwiches

  • Homemade Thousand Island Dressing:
    1/2 cup mayonnaise or plain greek yogurt
    2 tablespoons grated onion
    1/4 cup ketchup
    3 tablespoons sweet pickle relish
    1/8 teaspoon paprika
    1/8 teaspoon salt
    1/8 teaspoon black pepper
    1/8 teaspoon garlic powder
    1/8 teaspoon onion powder
    1 teaspoon Worcestershire sauce
    1 teaspoon of white vinegar
    In a bowl mix all the ingredients thoroughly and chill them until ready to use.
    Rachel Sandwiches(makes 4 sandwiches)
    8 slices rye pumpernickel swirl bread or any other bread you like
    8 slices swiss cheese
    1 cup creamy coleslaw
    1 lb. sliced turkey or more depending on appetite
    3 tablespoons unsalted butter
    To construct the sandwiches, butter one side of each piece of bread.
    Place four slices butter side down.
    To each piece of bread add one slice of swiss cheese, then some slice turkey, spread some cole slaw, the another slice of swiss cheese, then alittle thousand island dressing, then top with the remaining four slices of bread, so the butter side is face up.
    In a heated skillet over medium low heat. place the sandwich butter side down and cook on each side for 2 to 3 minutes, just like when your making a grilled cheese sandwich. Make sure each side gets golden brown and crispy and the cheese gets melty.
    And keep repeating the process till all sandwiches are done, depends on how big your skillet is you can cook one to two sandwiches at once in the skillet.

    Having worked in a NYC deli for many years as a youngster, a typical Rachel sandwich is usually made with Pastrami, Swiss Cheese, and Cole Slaw, on toasted/grilled White Bread, often Marble Rye is used in authentic Rachael's in NYC delis. Turkey is used/offered at lower-end delis and is an acceptable alternative but far less poular. Thank you Sara

    When grilling a sandwich, I always put a pot lid over the sandwich to keep the heat in and heat up the sandwich better. Everything in the sandwich gets nice and hot.

    My sister makes inside out grill cheese and it is so good. She puts a hand full of cheese in skillet on low heat adds slice of bread on top of the cheese then adds more cheese on top of bread then adds top piece and repeat 1st step so both sides have cheese. 💝
