Thank you for joining us on this crazy journey! Our family- Kate and Marius plus our five kids, have always enjoyed living a homemade life whenever possible. Moving 1000 miles north in 2017 to Northern BC, Canada upped our game even more. We live on a 34 acre homestead and get a kick out of things like raising our own meat, dairy and vegetables. Theres plenty of failures, you’ll be sure to see those here too. We’re a homeschooling family who believes life is the best teacher but we do hit the books in winter. We have a cool room in the basement that stays at a decent temperature for it

Sorry for the delayed reply! My ratio is 1/4 cup per gallon of milk.

I have a question. is it okay for your sour cream to be left on the counter? I don’t know if you were in the process of putting it in the fridge or can you leave out homemade sour cream?
It cultures on the counter for about 24 hrs then lives in the fridge
It was the harmonica playing in the kitchen for me 😂 Sometimes when I'm watching your videos, I'm not sure if your kids are the ones making the noise or mine! It all blends into a Happy cacophony! 🤣 I kinda wish I had that much milk to deal with. Hopefully next spring we will be milking goats.

Watching your precious family from Nova Scotia! We’re about to have our first milk cow. Did I understand correctly, did you take the cream out of the milk to make your cheese?

Hello Nova Scotia! I have precious family that lives out there!
Any milk older than 24 hours I take some of the cream. Any milk two days old, I take all of the cream. If the milk is three days old or more, I skim all the cream and don't use the milk for cheese. Once the cream has well separated from the milk it doesn't make into cheese very well and you'll just lose it all in the whey. So best practice is to use milk three days or fresher.

I agree with kiddos-peanut butter cookies is on my agenda tomorrow & possibly scotcharoos-6 breakfast freezer meals/ 2 funeral potatoes 2 MS mud cheese potato/ lI’ve prepped most of ingredients so just put together!I’ve got a bunch of apples to peel for apple butter and maybe I’ll get to making blueberry syrup/blueberry lemon jam🤷♀️

Hi Kate, fellow cheese maker here. Do you ever maken Ricotta from the whey of your hard cheeses? Maybe you take off a lot of cream before making your cheese, and it's not worth the while. But otherwise it's a very easy step to get some extra goodness out of the whey before passing it on to the chickens and SO delicious!
I take cream off and we also just done love ricotta...so more for the chickens!

This is a super informative video.. I have been dithering back and forth on making cheese. Usually my chickens get my old milk.. I’ll leave a container of milk on the counter until it clabbers into a solid mass floating in whey. I have no idea what it actually is, but my chickens love it.. i just hate to waste it. You’ve inspired me to try cheddar!!
You can do it!! And you will love making your own cheese!
