FILLED EGGPLANT WITHOUT MEAT, an easy sicilian recipe with eggplant, guaranteed success!

This recipe, handed down from my grandmother to my mother, is easy and affordable for everything; a really easy and tasty way to enjoy eggplant: stuffed without meat. A meatball is inserted in the center which, during cooking, will release a scent and flavor with guaranteed success.
The eggplant is not fried but cooked in the pan. My advice is to let it rest a little after cooking to be served lukewarm. Eating "Delicious and Light" is possible, so why not try it? Enjoy your meal!
INGREDIENTS for 2 servings:
500 gr. of eggplant
Salt to taste
30 gr. of onion
300 gr. of tomato sauce
300 ml. of water
4 teaspoons of extra virgin olive oil
30 gr. of breadcrumbs
30 ml. of milk
20 gr. of grated Parmesan cheese
1 clove of garlic
1 egg
black pepper to taste
parsley to taste
a few basil leaves
